Leftover Lunch

Lunch was another PEI WEI Leftover creation. When I ordered this dish the other night, I was disappointed that my “veggie lo mein” had about 5 pieces of vegetables.


I decided to add half of a red pepper and a package of frozen sugar snap peas to spruce up the leftovers. I warmed up the veggies in some soy sauce and threw in the leftovers. How block-like!


Adding the veggies made a HUGE difference. I piled my plate high with the pasta and lo mien mixture and still managed to have half leftover. Gaaah, I’m going to be eating leftover leftovers!

IMG_3890 Just goes to show, you can be creative with leftovers! I used to not like eating leftovers because I would get bored of eating it or whatever. Now, I have found that adding just a few ingredients makes it a completely different dish!

Rainy, Hungry Morning

Last night I was G-chatting with my BFF Debbie about our running plans for tomorrow. Even though we don’t run together during the week we have similar training plans and paces, etc. I told her that I had 7 miles on the schedule but looking at the weather (lightning and 95 degrees) for today made it seem impossible. I came to the conclusion that if I were to run today, it MUST be on the torture tread mill. YUCK, 7 miles on a treadmill!!

Much to my surprise, I woke up with partly cloudy skies (still some sun) and 74 degree weather! Woo-hoo! Running outside is the BEST! I love feeling like I am actually going somewhere and not just stuck in one spot.

I got started a little later today at 7:00 am so I had to shorten it to 5 miles. I completed my 5 mile run faster than I expected! I did end up getting rained on though.

  • Time: 44:40 (speedy!)
  • Average pace: 8:56 min/mile (go me! LOL)
  • Average Heart Rate: Forgot to bring the strap with me to Tampa :*(

Once I got back I was HANGRY!!! I took out my pre-portioned cereal from home and added stuff from my parents’ kitchen.


My bowl included:

  • 1 cup Kashi GoLean Honey Almond Flax
  • 1/2 cup fat free milk
  • banana
  • handful of kashi heart to heart


It was definitely a satisfying breakfast. I think it is important to make sure that I eat larger breakfasts EVERY morning, not just on days that I run. I noticed I was really hungry yesterday morning even without a run. My body is used to having between 400-500 calories in the morning and I feel starved with anything less.

IMG_3879 And since I’m not one to waste milk, I just added a few Kashi heart to heart pieces 😀 They tasted great in the already Honey almond infused milk.


Are you hungrier on mornings you run? How much fuel do you need in the morning?

I’m hungry the same amount every day pretty much. I think my body has gotten used to being fed the most amount of calories in the morning. I know some people (like most of my family) couldn’t finish a bowl of cereal or a piece of toast. I could gobble the whole fridge if I wanted to!
