Strawberry Shortcake Oatmeal, Take 2

Good morning, blog friends 😀

This morning I met with Caitlin for a chat an easy 3 mile run. We intended to run at the park, but when we arrived at 7:00 am the gates were still locked. So much for opening at 6:00 am! Maybe I can blame it on the holiday weekend.

After we found a place to run, we did 3 miles at an easy pace which took about 30 minutes. It seemed like we were more interested in chatting and ended up walking around the lake a few times after or run was complete. 😀

Once I got back, I decided to give the Strawberry Shortcake Oatmeal another try. It’s hard to get a recipe perfect the first time, right?



  • Make oats as usual (I microwave them, so sue me).
    • 1/2 cup Oats
    • 1/2 cup fat free milk
    • 1/2 cup water
  • Mix in 1 teaspoon brown sugar
  • Top with strawberries, crunched up graham cracker, and dollop of vanilla yogurt.


YUM! I think the vanilla yogurt and the brown sugar added a little something! 😀 I liked this flavored Chobani better than the plain. It reminded me of tart fro-yo!


I can’t wait to check out the other flavors of Chobani!

Mystery Package and Tilapia Tacos

My drive back to my apartment tonight was rather boring. It took a little extra time because of all the rain. I’m beginning to think that Mother Nature wanted to sign up for the July Water Challenge.  FYI: It’s not too late to sign up! 

I munched on a Peanut Butter Cookie Luna bar on the drive home. It didn’t have the peanut butter taste I was expecting I guess. I like peanut butter cookies, but this tasted more like peanut brittle. I only finished half of it and I’m saving the other half for before my run tomorrow. I probably would not buy this flavor again.


I also munched on some cantaloupe (about half of what was left). It was an awkward car snack as juice was going everywhere but whatever. People were probably looking at me funny from their cars.


Jason (my boyfriend) called to see how far away I was, and to let me know I had received a package! What the heck? I NEVER get stuff in the mail… well… other than bills.

I was super duper excited when I got home to open the mystery package. Hmmmm… what could be in this little Styrofoam cooler?


Well, CHOBANI of course! Morgan from Chobani sent me a package of each of their flavors of yogurt to try out. Remember my first experience with this Greek yogurt? I’m hoping that once I sample ALL of the flavors, I will have found at least a couple (or all) that I like! (My advice: don’t start with PLAIN!)


For dinner I was really craving Mexican food. I didn’t really feel like ground turkey… so I used Tilapia!

We bought these new wraps at Publix, and I wasn’t sure how they would taste. I always have a hard time finding a good taco/wrap because most of them have partially/fully hydrogenated oils (trans fat). These did not have any trace amounts, so we went for it.


They seemed pretty healthy, but I need to re-look over the nutritional stats. Jason was rushing me at Publix! Gah!


Do you have a taco/wrap recommendation? I love the FlatOut Wraps but I thought they were too big for tacos!

Jason actually helped cook tonight, which is so rare! He cut up a quarter of an onion and sautéed it with some olive oil and minced garlic. He then threw in one tilapia filet and added some lemon pepper and broke  it into smaller bite size pieces. What a lazy chef… what is he doing?!


Once the tilapia was done, I topped it with some canned diced tomatoes (they were buy one get one free at Publix), a sprinkle of mexican cheese, and some homemade guac.


This recipe made three tacos: one for me, two for Jason.


I think the guac added a little something something 😉


Oh yeah! I can’t forget about my tomato+guac combo for chip dipping action.


It was horrible. Don’t try it. LOL.


I’m now off to spend time with the lazy chef! It feels so great being back in Orlando! I always feel like the second I get home the weekend begins. I have tons of fun planned for the weekend!
