Last Lazy Day

Big Thanks to Zesty for helping me out with blog stuff. I kept getting redirected to the old blog… did anyone else have this problem?

I spent most of the morning not organizing my office like I said I would… but instead watched tv on the couch and worked on the blog. Oh well! This is my last of the “lazy days” until school starts… gaaaah!

I did actually get off the couch to make some lunch. I had this bag of Tofu Shirataki noodles in the fridge that needed to be used up.

The ingredients are: Tofu and Yam flour which sounds sort of odd. The entire bag only has 40 calories in it, which is probably why I’m already hungry as I’m typing this!

I stir-fried:

  • yellow bell pepper
  • red bell pepper
  • broccoli
  • carrots, diced
  • shrimp
  • the whole bag of noodles
  • teriyaki sauce

I topped with sesame seeds! It made for a beautiful lunch.

Don’t let the bowl size fool you, it was a big portion!

Back to the couch I go! Savoring the day…

  2. Hey! I just read your post about running with Jason and I had to giggle a little! My name is also Megan (no “h”) and my husband’s name is Jason! He was never a runner and he recently decided to try going with me….so we have started slow and it makes me so happy that he’s even trying! Each day we’ve gone, I see he can go a little bit further without having to walk. It’s funny that there are two “Megan and Jason’s” out there doing the same thing:)

  3. Shirataki noodles are not filling at all!! Did you like them? I thought they were ok – definitely have heard mixed reviews though (some can’t get past the fishy smell and “weirdness” of it ya know?)
