As I mentioned before, I am the VP of a student organization on campus, ABC.

ABC= Associated Builders and Contractors, and is a national merit-shop construction organization. I actually thought that I wanted to go into construction when I first started school, and worked at a construction company for almost two years until I changed to Civil Engineering. That’s a whole other story…

It’s the second week of school and all the engineering clubs are recruiting members!


Pretty ABC board, huh? That’s my doing!

We set up our table in the atrium and started telling people about our club! It’s really small, but that’s because we are having to basically start from scratch.


That’s the president, JJ, and me! (above)… and two other officers Sagi and Jason:


It had been POURING rain on our walk over, and I was soaked, freezing, and hungry.

Around 4:00 pm I ran to the nearest food place (Einstein bros bagels) which is connected to the engineering building, and picked up a cup of chicken noodle soup:


It was cheap, hot, filling, and healthy. All perfect solutions!

I also had a lollipop I stole from our table 😀


I headed to class… blah, blah, blah… and after class we had our first official ABC meeting of the year!

I was sort of nervous since I play a big role this year, but everything went smoothly thanks to my handy agenda and lots of planning throughout the day!

It was my responsibility to order food for the meeting, and our options are limited since it must be provided by an on campus source (rules are rules). I chose Jimmy John’s which I’ve never actually had before!

For the meeting, I ordered multiple types of subs, but was disappointed that they do not offer anything other than white bread for platter orders. Oh well, free food.


I ate this plate + one more sub. Three  baby subs= one normal size sub, so I figured that was a good amount, and for some reason I was starving!!

My sammies had turkey, tomato, lettuce, and sprouts + mustard. (I HATE MAYO!)

LOL MOMENT: Someone asked me why I ordered seaweed on the subs!?! I told him they were sprouts!


I just got home, and ate two of my homemade chocolate chip cookies. Just as good as the first day!



I feel really good about the upcoming year, even if it IS super busy to the max!!

Greek Yogurt Gods Must Hate Me

As I mentioned, I pre-packed my lunch and breakfast last night to make my morning a little easier.

I had fruit salad from yesterday around 11:00am:


I sat down to the first part of my lunch around 1:00pm… 


…and when I opened up the yogurt…



That is not cool. I bought it this morning, kept it in a cooler with ice packs all day, and I still got mold. Totally returning it to Publix.

It’s ironic because the orignal one I packed was actually frozen solid in the back of the fridge and I stopped at Publix on the way to replace it!

I ate the cereal… and went ahead and ate the rest of lunch.


Do these ingredients look familiar?


I made an Asian salad with:

  • mixed salad greens
  • matchstick carrots
  • red bell pepper
  • bean sprouts
  • snow peas
  • mandarin oranges
  • scallions
  • edamame

Along with a side of sesame ginger dressing:


It was really tasty, but I don’t think it’s going to keep me full until dinner, and I ate all my snacks (except obviously not the yogurt!)

How frustrating!

I think the Greek [yogurt] gods must have something against me today!

Learning to Balance

I woke up late, and only had time to run 3 easy miles. Felt great, although short!


Luckily, breakfast didn’t require any effort this morning. It tasted great, and was really easy to eat in the car. I present to you…

a BREAKFAST COOKIE!  (thanks for the idea, Gina!)


I mixed up the ingredients yesterday:

  • 1/3 cup oats
  • 1/2 scoop vanilla protein powder
  • 1 TBL Peanut butter
  • 2 TBL fat free milk
  • 1/2 tsp brown sugar
  • cinnamon
  • raisins


…and popped it in the fridge and let it sit overnight.


I really don’t want this to seem like I’m complaining… but I’m already stressing out!

I just found out last night that on top of everything else, I’m going to have to start taking a Saturday class form 8:00am-5:00pm for the next six weeks (starting next weekend).

Somehow, I am going to have to learn to balance:

  • 17 credit hours of Senior level engineering course
  • Senior design project
  • studying for the FE (Engineering) exam
  • vice pres. duties for my major’s professional club
  • training for a marathon
  • being a good girlfriend
  • all while trying to plan ahead/eat healthy

Gaaah! I am on a mission to figure out a way to balance all of this stuff without losing my mind.

Class…..is… starting. G2G!
