Not Goodbye, See You Later

I just said “see you later” to my BFF Debbie. As I’ve been saying, Debbie is leaving tomorrow for NJ and I’m really sad. 😦

I’ve actually known for quite some time but didn’t say anything about it on the blog until a week or so ago, so I’ve had time to “prepare”. LOL.

I’m not going to lie, growing up is hard!


Today should have been spent studying for tomorrow morning’s hydrology test, but I couldn’t bring myself to study. I spent all of last week studying, and it got me nowhere. I’m rebelling.

I made a quick lunch before heading out for some errands. Quesadilla with grilled zucchini, leftover chicken, and cheddar cheese.


I ate the zucchini that wouldn’t fit into the quesadilla on the side. Grilled zucchini is so delicious!



During errands, I met up with Meghann. We stopped at Starbucks for some refreshments. It’s flippin’ hot outside!


I had an iced nonfat latte with 2 pumps vanilla. Oh so yummy!


Meghann was generous and shared a pumpkin spice Hershey’s  kiss.


I expected chocolate with pumpkin inside, but it was orange pumpkin goodness!


I also snacked on an apple and peanut butter when I got home:


Tonight I was on my own for dinner, which basically means I can have whatever I want! I secretely love these nights!

I tried to recreate the Publix Tuscan Minestrone soup that I had a few weeks ago. It came out different but amazing!


I started with these two soups, veggie broth and roasted red pepper and tomato:


I added some roasted veggies:

  • broccoli
  • onion
  • carrot
  • mushroom
  • peas
  • celery

I boiled some macaroni pasta and spinach… and added in some white beans and thyme. I let it all simmer for 20 minutes or so…


I’m happy to say that I have leftovers! Soup is my comfort food.

So is chocolate… times…3.


My test is in 8 hours… I haven’t studied!?!

It’s so hard to focus my mind on school when I feel like there are one billion other things going on!


I’m really sorry to be so “negative nancy” lately. My life hasn’t exactly been very rainbows and sunshine lately. Things have to start looking up soon!!

Debbie’s Leaving…

This morning I traded my 12.0 mile scheduled long run in for a walk and breakfast with my BFF Debbie.

She is moving to New Jersey tomorrow, and today is our last day to hangout. I will miss my BFF!!


Does anyone need a running buddy in New Jersey?! 😀


Debbie was my very first runner friend, and inspired me to train for my first half marathon with her in December 2007!


We finished two half marathons together, and tons of other fun races!


It’s been so nice to have her right next door (literally down the hall) for so long! I will miss girl’s nights….IMG_3513

We have plenty more fun times to look forward to! She’ll be back for Thanksgiving, and again in January for the marathon!! I’m trying not to be sad!!


However, It was a sad and weird morning not to do my long run. We did go for about a 3.25 mile walk which was nice! We chatted about the move, her wedding, and my poor shin. :( 

After our walk, I had Debbie and her fiance come over for breakfast with us!


I prepped the fruit last night:


  • cantaloupe chunks
  • kiwi
  • strawberries

And made the waffles this morning:


A few weeks back, Debbie brought me some Buckwheat flour waffle/pancake mix that I haven’t had a chance to use. I figured today was the perfect occasion!


Debbie and Mike brought over the contents of their fridge and pantry, including this bottle of pure maple syrup! I have only ever had the real thing once!

I also had another scoop of fruit at the end, and added more syrup.


It was nice to be able to hangout with them before they leave! Debbie and I have plans for one more Girls’ night of watching Desperate Housewives! 😀
