Not Goodbye, See You Later

I just said “see you later” to my BFF Debbie. As I’ve been saying, Debbie is leaving tomorrow for NJ and I’m really sad. 😦

I’ve actually known for quite some time but didn’t say anything about it on the blog until a week or so ago, so I’ve had time to “prepare”. LOL.

I’m not going to lie, growing up is hard!

Today should have been spent studying for tomorrow morning’s hydrology test, but I couldn’t bring myself to study. I spent all of last week studying, and it got me nowhere. I’m rebelling.

I made a quick lunch before heading out for some errands. Quesadilla with grilled zucchini, leftover chicken, and cheddar cheese.

I ate the zucchini that wouldn’t fit into the quesadilla on the side. Grilled zucchini is so delicious!

During errands, I met up with Meghann. We stopped at Starbucks for some refreshments. It’s flippin’ hot outside!

I had an iced nonfat latte with 2 pumps vanilla. Oh so yummy!

Meghann was generous and shared a pumpkin spice Hershey’s  kiss.

I expected chocolate with pumpkin inside, but it was orange pumpkin goodness!

I also snacked on an apple and peanut butter when I got home:

Tonight I was on my own for dinner, which basically means I can have whatever I want! I secretely love these nights!

I tried to recreate the Publix Tuscan Minestrone soup that I had a few weeks ago. It came out different but amazing!

I started with these two soups, veggie broth and roasted red pepper and tomato:

I added some roasted veggies:

  • broccoli
  • onion
  • carrot
  • mushroom
  • peas
  • celery

I boiled some macaroni pasta and spinach… and added in some white beans and thyme. I let it all simmer for 20 minutes or so…

I’m happy to say that I have leftovers! Soup is my comfort food.

So is chocolate… times…3.

My test is in 8 hours… I haven’t studied!?!

It’s so hard to focus my mind on school when I feel like there are one billion other things going on!

I’m really sorry to be so “negative nancy” lately. My life hasn’t exactly been very rainbows and sunshine lately. Things have to start looking up soon!!

Must… cheer…up!

  1. Chin up! It will all be okay.

I’m even closer to my best friend from college now that she lives halfway across the country than we were when we were just down the hall from each other. When there’s distance involved, I think sometimes you can focus on the more important things in a friendship rather than the day to day BS we sometimes get caught up in.

  2. aww 😦 That’s sad that your best friend is leaving… I’ve been through exactly the same thing, except I was the one forced to leave. It’s hard, I know… But you’ll get through it 🙂 you have the entire blogging network here to support you and give you love when you need it. You’ll never be on your own :]

Your soup actually looks SOOO GOOD! i wanna try out that recipe now!

If I lived in America, i’d be your running buddy 🙂

Chin up cutie, it’ll all ease itself out soon. Promise!

  3. We all have those periods of grey skies in our lives. Don’t worry, things are going to get so much better for you! I just know it. 🙂

Take care hun and keep looking up because you may just miss something significant if you aren’t keeping your head held high! 😉

    Love ya girl!

  4. aw girl i hope things start to look up for you! 🙂 The soup looks amazing, an i’m so glad you have leftovers!

  5. I am sorry to hear that your best friend is moving 😦 that has got to be really hard on you.. I don’t blame you for not feeling like studying, sometimes life gets in the way. I hope things start looking up for you soon!

The soup looks quick, easy and delicious! A definite winner. Soup is also my comfort food of choice.

  6. Aww, I’m sorry about your friend leaving. I’ve been having a terrible time trying to focus on school lately too. I just have a bunch of REAL LIFE things going on and don’t want to study or do assignments anymore. I even woke up early this morning to do some studying and here I am reading blogs!! Sigh

  7. good luck on the test today meg!!

  8. We all go through tough times – and that’s what the blog is for. To blog about the good AND the bad. We’re here to listen!

I love zucchini tossed with olive oil, garlic salt, pepper & parm cheese, then roasted in the oven. WOW.

  9. Believe I know how tough it is when you no longer have your best friend so close, it sucks!
For us skyping is fun, sending cards for random reasons, long phone conversations, and we try to visit for each other’s birthdays! I just feel so grateful to have a best friend even if she is far away.
    Perk up buttercup!
    And smile!!

  10. Don’t beat yourself up over it Megan…it’s hard to lose a close friend to distance and have to keep on truckin! You CAN do it and M&Ms always help 😉

  11. Just like you said, growing up sucks. You are entitled to your “Negative Nancy” moments, sometimes life is highly irritating and you need to get it out. Life isn’t always puppy dogs and rainbows, so lesss than stellar days are completely acceptable.

Keep in mind that learning to deal with all the ups and downs of life isn’t easy and no one ever completely figures it out. I believe laughter is a good medicine, in whatever way it rears its dear little head:)

    Be well!!!

  12. OMG I’m totally with you on the negative nancy thing! I hope things get better in your world 🙂 Sometimes a girl just needs to whine ya know?

  13. I’m sorry to hear that you had to say “see you later” to a good friend today. But friendships that are strong will not be hurt by distance. But I know you will miss her.

Don’t worry about the negativity, we all have it once in a while. Especially with everything you’ve got going on, it is totally understandable.

    Hope things get better soon!

  14. Soup is my comfort food too. People always look at me like I’m nuts when I say my favorite food is soup, but it is!

I wouldn’t say you are a negative Nancy. You are just being honest, and that is what makes for a great blog, really. Hang in there!
