Teriyaki Tofu Triangles

That’s a tongue twister!

For lunch, I wanted to use up the other half block of tofu. I would end up throwing it away otherwise. I got a little creative, and cut them into cute little triangles!


I marinated them in teriyaki sauce for 30 minutes while I studied, and then grilled them on the George Foreman grill.

Along with it, I had carrots, cauliflower, and broccoli with the same marinade. I sprinkled it all with sesame seeds!


Yummy lunch!

Soon after, I wanted sugar! I busted out some cantaloupe…


I wasn’t really hungry this afternoon, but with a 12.0 miler on the schedule tomorrow, I need to make sure I fuel up adequately. I munched on some pita chips, hummus, and more veggies:


I packed a snack for my break between classes, which is at 7:15pm. I picked up this new (to me) flavor of Stonyfield yogurt, Super Fruits. I packed raspberries on the side to mix in!


It was a great idea! This flavor was very fresh tasting, and the berries were a perfect addition!


When I got home from class, I was distracted by this:


Water from the ice pack used to pack the yogurt leaked out of my cooler and into my bag, getting ALL my school papers soaked!


As much as I hated doing it, I saved that shiz.

While this was going on I tried to think of the fastest possible way to get food into my belly. A sandwich sounded awesome. The grill was still out from lunch, so I whipped up a panini!


I think the fact that it was warm made it so much better!!! Oh, and the bread was free thanks to Foodbuzz! 😀


It had:

  • 2 Slices Nature’s Pride Bread- 12 Grain
  • turkey slices
  • cheddar cheese
  • tomato
  • sprouts
  • mustard

I’m off to bed! Waking up at an Un-godly hour to run 12.0 miles!

    Good luck on the 12 miler tomorrow, I’m thinking of doing a 10 miler but mine has to be on the treadmill because it will be too cold to run outside!

  3. Ah. Best of luck on your 12-miler. I’m still a little chicken about trying tofu. How do you prepare yours usually? I really do want to try it soon though because I’m hoping to do a vegetarian week in the future.

    I feel ya about your papers. The other day I had printed some stuff to put in for copies and ended up spilling coffee on them and my desk calendar. I contemplated printing off more but since our printing is limited each month I decided to suck it up and put them in with coffee stains. At least you couldn’t tell there was anything on them when I got them back, but my desk calendar has the classic teacher coffee stain on it now, lol!

  13. I am so sad for your school papers, I have had some liquid mis-haps but usually it’s from me spilling coffee on them at my own desk.

  14. Hey! I know you have been bogged with exams lately, and I have my first O-Chem test in an hour. Do you have any tricks to help yourself stay calm? Or do you not really get worked up? For most all tests, I don’t get nervous. But for this test, I’m FREAKED! I know my stuff. I’ve seriously studied for like 20 hours. But…gah!

      I totally understand!!

      About an hour before the exam, I do something UN-related to the test, like wash dishes, fold laundry, something that requires zero thought. I tell myself that if I don’t know it now, it’s too late. I try my best, and try to stay as calm as possible. That’s about it. LOL. If you’ve been studying that much you should be fine 😀
