Bikes and Brownies

This weekend has really flown by! I’m sorry that I haven’t been around all weekend, I needed a break from the computer screen! Nothing too exciting happened, anyways.

 

This afternoon, I went on a bike ride with my friend, Mark. Caitlin and Kelly were supposed to join us on a trail, but bailed last minute. We decided to go anyways!

Instead of driving to a trail, we decided to just ride the airport loop. I got super excited every time a plane flew over. I used to work at the airport, but I still NEVER get sick of seeing them. I always find airplanes amazing.

We got a late start to the ride, and had to cut it short to make it back before sunset. We rode a total of 13.0 miles in about an hour. The winds were making us SO slow! There had to be gusts around 20mph.

On the ride back, Mark and I were talking about what type of food we were each going to eat when we got home. After discussing various amazing sounding foods, we both decided we were going to make pasta. I suggested we make dinner at my place since we both wanted the same thing.

 

I bought this new type of pasta, Garden Delight, which has a full serving of vegetables.

We basically started throwing random contents from my fridge into the pot. It started with pasta and ended up with:

  • grilled chicken
  • halved grape tomatoes
  • peas
  • garlic salt
  • lemon pepper
  • smart balance butter

It actually worked out really well! It was fun to throw a bunch of randomness in. The pasta had a great flavor, and I was glad that there wasn’t really any sauce to mask the taste.

Between the two of us, we finished off the entire box of pasta. I had seconds.

YUM! The best part, was that it cost around $3.00 for the entire meal. Yay for cheap eats!

 

After dinner, we made some delicious-buy-one-get-one-free-from-publix brownies.

Fajita Chili

Every since I got this Harry and David’s Fajita Chili soup mix for my birthday, I have been dying to try it!

We had a little cold front go through yesterday, and it was finally cold enough to justify chili making. Everything you need to make the chilli other than water, meat, and a can of diced tomatoes was already in the bag.

 

The first step was to rinse the beans, bring to a boil, and let them simmer for an hour. I have never made beans before, I always buy them pre-cooked in a can. It was SO easy!

Next, I used 1/2 lb of lean ground turkey breast (instead of ground beef that the bag called for) and dumped the vegetables and spices in.

Once that was done, I combined the meat, tomatoes, 4 cups of water, and the beans into the pot. I let that simmer for another half an hour or so. Once it was done, I served myself some in a mug. It’s more fun to eat out of than a bowl.

It made about 8 cups of soup! I can’t wait for leftovers.

 

It had a great flavor. It had a little bit of a kick to it, but nothing crazy. I had some cheese and crackers along with it to fill me up.

I love making homemade soups (or even semi-homemade). It tastes SO much better than eating it out of the can, even though I do that often.

 

What is your favorite soup recipe? I want to try to make Italian Wedding soup soon!

To Join, or Not?

My two-week Free Gym pass has officially expired. 😦

 

I feel like I did get a good amount of use out of it, though!

  • I swam 3 times.
  • Weight lifted 4 times.
  • Ran 2 times.
  • Attended 1 yoga class.
  • Used the elliptical machine 1 time.

 

I decided to go on a run this morning since the weather has finally cleared up. It’s been storming the past few days. I got in a 3.5 mile run, which is about as far as I can go right now. Even that is really pushing it. My knee feels the exact same as it did before I took nearly a  month off.

 

Before I left, I had a mini CLIF bar. Perfect size for pre-run!

 

After my run, I came home and made a bowl of pumpkin oatmeal. Wow!

It tasted SO good, but it made a TON! I ate most of it, but I feel stuffed to the brim.

My oatmeal included:

  • 1/2 cup oats
  • 1/2 cup water
  • 1/2 cup milk
  • 1 TBL flax
  • 1/2 cup pumpkin
  • almonds
  • raisins

YUM!

 

I am debating whether or not I should join the gym that I have been going to. Trying to be a good decision maker, I made a pros and cons list.

 

Pros:

  • The gym is close to my home, and on the way home from work.
  • Swimming pool give a good alternative to running.
  • Friends (Caitlin and Ryan) are members.
  • Free weights and equipment variety. It lets me do things other than what I can do at home.
  • Group exercise classes, like yoga, spinning, and kickboxing.

 

Cons:

  • Costs money…Luckily, the gym has no contracts or enrollment fees, but still I don’t know how much is too much to pay for a gym.

 

I still have the ability to work at UCF’s gym for free, but it’s far from home, always packed, and full of non-serious looking people (aka… flirtation central). I don’t want to wear a full face of make-up and straighten my hair to go work-out. It’s just not my style.

Operation Beautiful UCF

I stuck around after classes a bit later tonight. Caitlin came to UCF to speak about Operation Beautiful!

 

 

Before the event started, I met up with Kelly. We were so excited to support our friend, and they even interview us about what we thought of Operation Beautiful.

I was VERY impressed with how the event turned out. Caitlin did a wonderful job, and both Kelly and I were very proud of her! She spoke confidently and got the audience very involved. Everyone was freely discussing and seemed to really enjoy it.

 

I really had to think hard about some of the answers on my “personal credit card”. I realized that I really do have a lot of things that I like about myself. It’s always best to focus on the positive.

The best part was the free t-shirts that say “I ❤ My body”. How adorable! They even had blue ones for the guys (or girls that don’t like pink).

I’ve been seeing all sorts of little notes around campus. It’s great to see the message spreading.

Quick Start

Good morning!

 

It’s another super busy day in MegaNerd World!

 

I made a quick and light breakfast before I left the apartment. Green smoothie with banana, ice, milk, and spinach. Plus, two slices of peanut butter toast.

I have tons of stuff to get done in a short amount of time. Must. Get. On. It!!

 

I’m hoping to make it over to the UCF Student Union in time to see Caitlin speaking about Operation Beautiful! I’m so excited for her!

Long Productive Day

Wow. It’s been a very long day! I started my day at the gym, worked for eight hours, rode my bike with Caitlin, did homework, made dinner, and blogged (twice!).

 

After work, I headed out on a bike ride with Caitlin. I am really getting into biking! I am hoping to get out and do a longer trail ride this weekend.

 

We rode the same loop as usual, which turned out to be 15.0 miles for me. 

 

When I got home, I was STARVING! Working out twice in one day made me very hungry. I was craving marinara sauce and veggies, so I whipped up a quick meal based on those two ingredients.

I combined:

  • penne pasta
  • white beans
  • squash
  • broccoli
  • marinara sauce
  • spinach

It was extremely filling and I could barely finish it. My tummy is happy!

What are We Training For?

My kitchen was a crazy mess this morning.

Trying to pack for a whole days worth of food can be tough!

 

I woke up extra early to hit the gym. My two week free pass to the gym expires on Thursday and I’m trying to make the most use out of it possible. Since I worked out my legs last night, I decided to work out my upper body.  I ended up working my shoulder, back, and biceps.

 

My workout:

  • 5 min warm-up on elliptical
  • 3 x 10 Overhead Shoulder Press (8 lb dumbells)
  • 3 x 10 Front Raises (8 lb)
  • 3 x 10 Standing Flyes (8 lb)
  • 2 x 10 Upright Rows (20 lb bar)
  • 3 x 10 Bicep curls (12 lb dumbells)
  • 2 x 15 Lat pulldowns (45 lbs?)
  • 2 x 15 Reverse Fly Machine
  • 5 min cool-down on elliptical

 

The entire workout only took 35 minutes! I thought it was going to take 45, so I had a few extra minutes to stop and get a coffee (and blog) before work!

While blogging, I ate my pre-packed breakfast. I was planning to eat it at work, but I was STARVING!

I packed Peach Chobani, Kashi H2H cereal, and granola. I kept the yogurt on an ice pack while at the gym, and mixed the two in the tupperware right before I ate it.

Earlier this week (or last week?) I mentioned to Caitlin that with my knee still not being 100% healed, I’m not really training for anything specific. I am exercising for the sake of health, well-being, and overall fitness. I feel carefree!

 

I’m usually the type of person that THRIVES with specific plans and structure. I like knowing ahead of time what workout is coming. Not having specific training goals (and the deadlines that come along with them) right now has been rather nice! I feel like I am finally enjoying exercise.

 

It has been tough to get into a routine, but I feel as though I’m starting to establish a new one. I am finding that listening to my body makes me a happier person in general, but structure works better with specific goals (like the marathon.)

 

A side note, is that without added pressure in my head of “MUST. GET. 5. MILE. RUN. IN. TODAY!!!” my grades and other areas of life have been improving. I feel more motivated in other areas of my life. Interesting!?

 

I am really enjoying swimming, biking, and weight-lifting. Maybe one day I will try a Tri? (Pun intended.) As for now, I have no set races on my calendar, and I kind of like it that way. 😀
