Fajita Chili

Every since I got this Harry and David’s Fajita Chili soup mix for my birthday, I have been dying to try it!

We had a little cold front go through yesterday, and it was finally cold enough to justify chili making. Everything you need to make the chilli other than water, meat, and a can of diced tomatoes was already in the bag.

 

The first step was to rinse the beans, bring to a boil, and let them simmer for an hour. I have never made beans before, I always buy them pre-cooked in a can. It was SO easy!

Next, I used 1/2 lb of lean ground turkey breast (instead of ground beef that the bag called for) and dumped the vegetables and spices in.

Once that was done, I combined the meat, tomatoes, 4 cups of water, and the beans into the pot. I let that simmer for another half an hour or so. Once it was done, I served myself some in a mug. It’s more fun to eat out of than a bowl.

It made about 8 cups of soup! I can’t wait for leftovers.

 

It had a great flavor. It had a little bit of a kick to it, but nothing crazy. I had some cheese and crackers along with it to fill me up.

I love making homemade soups (or even semi-homemade). It tastes SO much better than eating it out of the can, even though I do that often.

  1. I love butternut squash and butterbean soup – just dry squash cubes, onion, garlic, cumin (whatever flavours) for a few minutes, add some stock, simmer til soft, add butterbeans, blend, done! SO delicious!! 🙂

  3. I made a sweet potato and peanutty stew earlier this week – SO easy. If you can chop veggies and stir a pot, you can make that recipe 🙂

  5. Mm that looks really tasty! I haven’t seen a mix like that in stores anywhere. My favorite soup, which I haven’t made yet, but my mom always does, is vegetable soup. It’s so delicious and is the perfect comfort food on a cold winter night. She hasn’t made any in a while, maybe I should drop the hint for when I go home?

  7. I’ve never made beans before either. I always comtemplate it when I’m at the store, but then make a quick bolt to the canned beans!

  10. HEALTHY SOUP. I cannot get enough of it. It’s basically just veggies, potato, chicken stock and red chili flakes blended. I could eat it every single day.

  13. Yum!!! I love soup, especially when it’s cold outside. My favorites are butternut squash soup, with usually extra veggies mixed in, or split pea soup with barley. I actually just made my split pea soup- lunch maybe? I think so.

  15. My favorites are split pea, cauliflower soup (tastes like mashed potatoes to me!) and veggie chili. The latter two I have made myself but I have yet to attempt split pea at home, I really should though 😉

  17. I received the Harry and David mix for Christmas, too, but I think it was chicken vegetable. I was a bit skeptical, but I LOVED it! It was really yummy, and I could pronounce all of the ingredients 🙂

  20. You just brought me one step closer to attempting non-canned beans! This looks delicious, and it’s easily swappable with vegetarian meats! My favooorite comforty soup has got to be pasta fagioli, soo delicious!

  22. Homemade soup is the best. I wish I wasn’t such a snob about it, but I really don’t like soup from a can. The good news is most homemade soups can be frozen for a quick meal later on. I think I like lentil soup the best.

  25. I’m definitely a soup kind of girl. I love a good chili, also spicy red lentil. Egg drop soup is amazing (and really really easy to make), especially with a couple wontons in it (YUM – heaven.) Any hearty type of veggie soup. MY MOM also makes this tomato and bleu cheese soup that is to die for.

  26. I’m a huge soup girl! My favorite soup is this amazing Polish soup with potato, saurkraut, and cabbage (whose name I can’t remember for the life of me right now!) Also vegan split pea is great!
