Packing My Bag

I had great plans on waking up early this morning and hitting the gym before work. However, I slept right through the alarm. 😦


I’m packing my gym bag, and going straight from work! If I stop at home (which is out of the way) I know that I won’t end up going. 




This morning, I had time to make a decent breakfast. I have a good amount of food here in the apartment waiting to be eaten!




I sliced up a peach, sprinkled it with cinnamon and brown sugar. I microwaved it for 30 seconds, and then topped it with a container of peach Chobani. On top, I added a cup of the cinnamon flavored Kashi H2H cereal. YUM!




Yesterday, before I left for my late afternoon class, I knew that I needed a decently heavy snack. I am really trying to increase my intake of fruits and veggies, so I decided to pack them in.




I roasted a small sweet potato, two carrots, and some brussel sprouts. I sprinkled them with salt and pepper, and baked for 20 minutes at 350F.


After writing yesterday’s post about happiness, my mood was brighter all day. I drew a smiley face in the ketchup! 😀




I also made a pre-packed sandwich at home. I’ve been getting really bad about spending too much on food on campus. I’m always tempted by subway sandwiches, when I have the same stuff at home.


I tried to think about why I always feel like my sandwiches suck. I realized I was making plain turkey and cheese. DUH! I added some mustard, spinach, and banana peppers, and BAM! Instantly tastes so much better!




It was really filling, too!




When I got home, I had two little “ice cream sandwiches” that I made.




My mom told me about this idea. Basically you take graham cracker squares, and put a large spoonful of low fat cool whip (I used Publix generic) and freeze them.


Once they are frozen, they taste like little ice cream sandwiches!



They are really low calorie and taste great! However, I would probably eat anything sweet.


Well, I’m officially on spring break.


I really need to get out of this town for a bit. I feel like I have some junk I need to leave behind. I’m planning an impromptu road trip. When I get home tonight, I’m packing my bag and hitting the road.

  3. Have a fun road trip!!! I know what you mean. I would LOVE to get out of town, as I’m on spring break too (after my classes this morning). But I still have to work 😦

    And the peach, chobani, and cereal..yum! Double does of peaches is NEVER a bad thing.

  10. Those “ice cream” sandwhiches are good! When I make them I sometimes mix in some flavored yogurt with the cool whip to make the filling. I really like strawberry ones! Or maybe pumpkin with mini chocolate chips mixed in! yumm

  21. I feel the exact same way about the sandwiches that I bring to work for lunch. Turkey, cheese – blah. But it’s not that hard to make it better. I’m spending way too much money on buying lunch every day, so it’s time to get creative – at least a little…

  22. Banana peppers is why I love subway so much! I finally bought some and now homemade sandwitches taste sooooo much better! But I must admit I still LOVE subway.

  24. An impromptu road trip sounds like a good idea. I don’t think I got around to posting on your post yesterday about happiness, but I just wanted to add something. I know you’ve been going through a lot of emotional changes with your breakup and moving into your own apartment, etc. I’m sure that you are tired of feeling sad and down. But just remember that it IS normal to go through this type of emotional roller coaster when major things in your life change. Even if you know you & your ex are both better off broken up, and even if you are out meeting new people, it’s ok to feel sad and down. Sometimes we put a lot of pressure on ourselves to be HAPPY & we continuously search for that happiness. But when we are going through major changes, we need those “down” moments to truly appreciate the “ups.” So just know that there WILL be happiness after this little rough patch of changes!
    That being said, I think it’s SO IMPORTANT to take a step back and look at WHAT you want in your life– who you want to be, what makes you happy, WHO makes you happy, etc etc. So good for you for thinking about it.
    Just wanted to send a little love through the internets! 😉

  26. Hi! I thought a lot about your post yesterday on being happy and it made me realize I need to be happier. I’m always down on myself for not-so-good workouts or eating badly, but sometimes not going all out on a workout and eating fries and drinking a beer make me happy! Thanks for opening my mind up a little to happy = healthy.

  34. I just have to say that i love to dip just about everything in ketchup, but carrots, sweet potatoes, and brussel sprouts!? I don’t think i would have ever thought to combine those things =)
