Last night was a blast!




Before everyone came over, I tidied up.




I finally got around to hanging some pictures and curtains!




Taylor and her dog, Cal (short for California) were the first to show up! They are both so adorable. I ❤ them!




Kelly showed up next, and we cracked open the first bottle of wine. It tasted like a candy apple, it was SO sweet!




Caitlin came over next. She and Cal bonded quickly! Everyone loves California!




I gave the girls a tour of my new apartment and we spent a good amount of time chit chatting. It was great to catch up with my girl friends. I get lonely around here!

Around 11:00pm, we decided to go out! It was Friday night and we didn’t want to stay in. We were all dressed up with no place to go.


In the meantime, we decided to head to the Ale House.

Between the four of us, we split french fries and an order of nachos.




We also had a couple more beers, and a round or three of shots. 😉

In a way, I was celebrating my birthday. Yes, I had Thai with my dad, my family took me to lunch, I made a giant cupcake, and had dinner and two desserts with Meghann, but I had yet to celebrate with my favorite pals (I miss you BFF Debbie!)

It turned out to be a pretty fun night. It was nice to cut loose!




So many people do the “healthy” one drink + club soda rule, but I prefer to live a little. I don’t drink often or really that much. Just like everything in life, it’s all about moderation!

I like wine and beer, but I’m not really into liquor. What is your drink of choice? (I’m assuming you are 21!)

The Celebration Continues…

I love how birthdays always seem to last a week. 😀


I still do NOT have internet in my apartment, and it looks like I won’t until Tuesday or Wednesday of next week. It’s starting to really annoy me!



After work, I met Meghann at her apartment for a fun girls’ night out. I was celebrating turning 23…




… and Meghann is celebrating her 25th on Monday!




Twenty three is going to be a good year. I can feel it.



The birthday girls headed out to Eden Bar for dinner.




The Eden Bar is attached to the Enzian Theater, a local independent theater. We sat out on the patio and enjoyed the relaxed atmosphere and great weather.




We had our heart set on the Enzian Herbivore Burger (Organic brown rice and mushroom burger, roasted tomatoes, provolone, toasted kaiser) that we saw Ashley review on her blog. However, once we got there and looked over the menu, we decided to go for the real meat burger. It’s our birthday, we wanted to live a little.


The Eden Burger (American 100% wagyu beef, 3 year aged cheddar, arugula, truffle mustard, Texas toast) came with a side of tomato soup with a balsamic vinegar. It was one of the tastiest burgers I have ever eaten!




Meghann was super excited about ordering the Purple Tostones (Double-fried purple Okinawa sweet potatoes, spicy roasted garlic ketchup). We split the order, and debated ordering more. I could have easily eaten more, but we were saving room for dessert.




Since it was my birthday, the waiter offered us a free dessert! We decided on the raspberry beignets which basically tasted like fried dough with raspberry sauce. Yum!




I was really impressed with the food at the Eden Bar. While the portions were a bit small, it was very flavorful. I can’t wait to go again!




Jeremiah’s Italian Ice e-mails out coupons for a free small ice on your birthday. We decided to go ahead and get dessert round two. Why not!?




I typically go for a non-fruit flavor, but tonight I chose Strawberry-Lemon with vanilla gelati. It was a nice change! I could only fit half of it in my stomach, I was getting so full.






On Friday night, my birthday celebration continued!


I made a delicious taco salad for dinner. I was craving chipotle, and decided to try to make something healthier (and cheaper) at home.




I used:

  • spinach
  • turkey breast
  • tomato
  • onion
  • pepper
  • cheese
  • guacamole
  • blue chips






After dinner, I set to work on baking myself a giant birthday cupcake. It’s just not a birthday without cake!




I used two boxes of funfetti cake mix, and homemade icing that I dyed pink. Funfetti is my favorite!



I ate the whole cupcake!!




Just kidding.  I had a few bites and called it a night. It was mainly just fun to make and decorate it!




It was a fun Friday night. 😀


My family is coming up to visit me this morning. I still haven’t decided what we are going to do today. We’re going to play it by ear.

23rd Birthday Breakfast

Happy Birthday to meeeee!


At approximately (ok.. exactly) 7:52 am, 23 years ago, a cute little baby named MegaNerd came into the world. I don’t really remember too much of it. Ironically, I don’t remember to much of my 21st birthday either. 


(Here I am with dad, at 7 months!)


Just because I live alone doesn’t mean I’m not going to celebrate my birthday!




I made birthday oatmeal! I used:

  • 1/2 cup oats
  • 1/2 cup water
  • 1/2 cup vanilla soy milk
  • almonds
  • flax
  • coconut
  • pineapple slice




Topped with 3 candles! (Because 23 might set my tiny apartment on fire!) I may or may not have sang happy birthday to meeeeeee! 😉


My mom sent me a birthday package last week, and I have been DYING to open it! I was good, and waited until this morning to open them.




My mom is always so creative with her gifts! She sent me a copy of her Applesauce Bundt cake, and the pan to bake it in!




She also sent two tank tops from my favorite store, Express.




A box of CLIF mojo bars, and a runners’ log! She knows me so well!




Despite it being my birthday, I have a RIDICULOUS amount of stuff to get done. Every minute involves at least 3 tasks at once, which gets tricky and stressful.


My dad is coming up tonight from Tampa to take me shopping for a bed, and to dinner for my birthday! I better start thinking of what I want to eat… YUM!

My First Day

Thank you all for your supportive comments and e-mails through this big transition in my life.


Yesterday was really rough. I spent the majority of the day moving my entire life and dividing up belongings.  Luckily, I had the help of three good friends.


I essentially just had a bunch of “stuff” and no furniture. (I don’t even have a bed in the new apartment!)




It was a physically and emotionally draining day. I felt a bit like I did during the Disney marathon. Kind of ironic.


Ryan was a HUGE help! Not only was she with me for about six hours (or maybe more?) packing up my stuff, but she was there to hug me, and basically set up and unpacked my entire pantry, laundry area, cabinets, and fridge. Thank you SO much, Ryan!




Since our cars were full of stuff and the fridge was empty, I ordered pizza for the moving crew! I ate half a veggie pizza on my own! Moving is a really intense workout.




Once everything was upstairs, I stood at the sink (I have no place to sit but the floor) and ate a bowl of cheerios and vanilla soymilk. It tasted amazingly good!




Once everyone left, I made my very first dinner in the new apartment. A combination of Trader Joe’s grain blend with white beans and broccoli




My kitchen has wood floors which I’m pretty excited about!


The apartment felt pretty lonely last night. I grew up in a house of 7 people, moved to the dorms, then 3 roommates, and then Jason. I have never lived alone, and it’s going to take some getting used to.


I do not have internet (yet!) in the new apartment, which is such a hassle! I actually missed an entire assignment due to lack of internet, but that’s another story. I headed to Panera Bread for some breakfast and free wifi action before work this morning. (I don’t have internet at work either!?!?)




I ordered a blueberry bagel with peanut butter




…and a hazelnut coffee. YUM!




I didn’t really have anything to pack for lunch today. There are very few healthy dining options anywhere near my work, but I did find a cute cafe to visit. I have been to Green Day Cafe once before and really enjoyed it.


I ordered a half sunset veggie and butternut squash soup combo to go.




Both the wrap and the soup were delicious, but I was hungry again within two hours.

I ate some crackers and a CLIF bar for snacks during the afternoon.


After work, I headed to the theme park of all home stores… IKEA! Like I mentioned, I moved into the new apartment with next to no furniture.




I love that store! I pretty much furnished my apartment for under $200. Awesomeness.


I loaded up my cart full of furniture, now I just have to bring it home and build it! I actually enjoy putting stuff together, and can’t wait to get some projects started!




By the time I got home from errands, it was too late to try to cook anything. I stopped at CHIPOTLE for a burrito bowl. I also picked up some chips and guacamole, but only ended up eating half of everything. My eyes were way bigger than my stomach.




It’s now 10:00 pm. I’m at Caitlin’s house using her internet (thanks!) even though she’s in Tennessee. I’m also stealing her air mattress so that I don’t have to sleep on the floor. 😀


Only a few more hours of being 22 years old! My 23rd birthday is tomorrow!

Time Flies

I spent the afternoon at my friend Lisa’s Bridal Shower!




Lisa was my neighbor since first grade! We went to the same church, middle school and high school, and college! Craziness!

Taylor and I were the only single (non married or engaged) people in the entire party. Here’s our “group picture”…




Let me just preface this by saying all things wedding sort of freak me out. I don’t know what it is, but I feel too young for all my friends to be getting married. Taylor feels the same way… which led to a very necessary shot of Vodka pre-party.


Don’t get me wrong… I am very happy for Lisa! (and all of my other happily married friends)




The best part of any party = FOOD.




I had a platter of food and ate every single bite. Oh, and I went back for more fruit and cheese. YUM!




We played all of the traditional shower games like “How well do you know the bride?” type stuff.




The group broke up into two teams, and we each had to design a toilet paper wedding gowns. My team had the brides’ mom as our model.


All of these crazy terms like "princess”, “mermaid”, “cap sleeve”, and “train” were being thrown around. GAH! It’s just toilet paper!!!!

Our model, Lisa’s mom won the contest!




I had a great time catching up with all the girls today! I miss our old high school group. It’s funny how you always have those friends that even after not seeing them for months or even years at a time, you pick back up right where you left off.




After the party, Taylor and I hit up Chili’s for 2 for 1 drinks!

I had two blue moons, and Taylor had strawberry margaritas!




We sat at the bar, and ate the free chips and salsa for dinner.




We also decided to be unhealthy and order the queso dip. Totally rash decision but so worth it.




I can’t believe that I have friends that are getting married. I don’t feel old enough for this to be happening…

Halloween Hangover

Last night was a BLAST!


My sister helped me set up the apartment, to make it more Halloween festive.

We set out munchies for snacking: chips with salsa or guacamole, cupcakes, grapes, and candy.


I had a lot of trouble keeping my hand out of the candy bowl last night. This is why we don’t keep candy in the house!


As I mentioned in my last post, Jason and I dressed up as Little bo peep and a sheep. Jason’s costume was dropping cotton balls ALL night!

My sister, Brielle, dressed up as a runaway bride. She used my sports bra top, my half marathon medal, and a race bib to complete her look:

Kelly and her boyfriend, Anthony were the first to arrive. Kelly dressed up as cave woman, can you guess what Anthony was?


Haha… a FOOD BLOGGER!! That’s Toni “with an i” from Toni’s Treats dot com. He carried a camera and plastic food around. It was something only our crowd would understand!

A few minutes later, Caitlin and her husband showed up as “sports players”:

Once everyone arrived, the fun began! There was tons of beer pong action:

On the other side of the apartment, more games we being played, and jello shots were being taken.

The Lime Jello was supposed to taste like a margarita. I used tequila, lime juice, and triple sec. They were strong!


I didn’t do a great job of photographing my food/drinks last night because I was busy having fun, but I drank about 4 beers…

Everyone finally left around 1:00 am. It was such a fun night!  I would definitely consider the party a success!


This morning I woke up feeling really tired…. hung over perhaps? I went for a short 3.5 mile jog to wake myself up. I have another busy day ahead of me!


When I returned, I made breakfast for the group!


My Oatmeal had:

  • 1/2 cup oats
  • 1/2 cup milk
  • 1/2 cup water
  • strawberries
  • banana
  • cocoanut
  • flax

Whew, that’s a mouthful!


We’re off to take Brielle to Disney for the day! It’s her last full day in town. 😦
