EPIC Pizza Eggplant

Do you ever get e-mails from a company or a newsletter that you automatically hit “delete” before you even read them?


I have a few I’ve should really unsubscribe to, due to lack of time to actually read them. This morning, I accidently opened the Hungry Girl Newsletter. I was still laying in bed, reading from my iPhone, when this picture caught my eye:






I read through the ingredients, and I had mostly everything I needed. I met Caitlin for a quick 3.0 mile run which ended in a trip to Publix to pick up an eggplant.


I made some changes to the original recipe based on what I wanted. I started out by hollowing out the center of an eggplant.




I chopped up the leftover eggplant, and added one organic italian sausage (crumbled), onion and green pepper and sautéed it all in a pan over medium-high heat.




I then mixed in two tablespoons tomato paste, two tablespoons italian bread crumbs, and one egg. I stuffed the eggplant with the mixture and baked for 30 minutes on 350F. I then topped with diced tomatoes and string cheese and popped it back in the oven for 10 minutes.


The results were EPIC.




It tasted SO good. I love finding recipes that sneak veggies in. I’m not even a huge eggplant fan and I thought this was amazing. My only complaint is that I was starving and it felt like it was taking FOREVER. Maybe not the perfect week-night meal, but if you have a bit of time, GO FOR IT!




I also had some pasta because I was so hungry. It honestly wasn’t necessary as the eggplant was extremely filling. Oh well!






Who knew eggplant could be so delicious?!

Exhibit A

One final down, two more to go…and a project that I haven’t started.  At least I have until Monday!


For the first time in… a LONG time, I finally blogged an entire days worth of food! My exam started at noon, so I ate a very early lunch:




I had a veggie burger, carrots and snap peas, pita chips, with hummus. I’ve been eating tons of these Dr. Praeger’s Veggie burgers, and I love them! They are yummy, but fall apart really easily.

I made an “A” with ketchup hoping it would be good luck for an “A” on today’s final.  A girl can dream!


I have TONS of hummus to use up. Caitlin brought this to me a few weeks ago after a shopping trip to Costco. I need to come up with more uses for hummus besides a dip for chips and veggies. Any ideas? I’m not feeling very creative.




This afternoon, I had a bit of a sweet tooth. Instead of digging into my Easter candy stash, which I was tempted to do, I blended up a healthy smoothie made up of berries, banana, and yogurt.

It’s kind of awesome that he makes me dinner all the time now. Not going to lie. Thanks, pal!

Found What I’m Looking For

Wow, the weekend flew by! I can’t believe it’s Sunday night already.


This week is going to be BUSY!

  • Today: Spent the day looking for an outfit for…
  • Monday: JOB INTERVIEW! (and last day of spring classes)
  • Tuesday: Work @ both jobs
  • Wednesday: Hydraulics Final
  • Thursday-Sunday: Work and Studying
  • Monday: Steel Design and Geotechnical Eng. Finals!


Then I have a two week break before I start my last undergraduate semester EVER!


This afternoon I headed to the mall to look for an outfit for tomorrow’s interview. I have my very first real job interview tomorrow, and I’m really excited!


I spent about an hour shopping, and eventually found this:




In the meantime, I ended up finding a lot of other fun items…I always get distracted!




It seems like every time I’m looking for something, I have a hard time finding it. Last year, when it was time for the Healthy Living Summit I couldn’t find a dress to save my life! When I’m not looking for dresses, I find tons of cute ones! The same thing happened today. I searched at 10 different stores before finding a basic interview outfit. Whew!


Mark recently discovered that he needs glasses, so while we were at the mall, he stopped at a few places to check some out.


He looks so smart in them! Not that he isn’t smart, he’s a double engineering major!

Hmmm… I wonder what I would look like with glasses?




We got out of the mall just in time! There were severe thunderstorm warnings and even a tornado watch!




Obviously, I cancelled my run. Hopefully I will get a run in tomorrow before my interview! It may help shake any jitters, anyways. I don’t have much to say about it other than that I know there will be other people interviewing before and after me. I hope that I can figure out a way to make myself SHINE!


The last (engineering-related) job interview I had was three years ago! I was EXTREMELY nervous, but obviously I couldn’t have done horribly, because I got the job! I feel confident and am trying to have a positive attitude. I just need to watch my usage of the word “like.” I tend to say it waaaaaay too much when I get nervous.




My tummy is a little bit knotted so dinner was basic.




Couscous-broccoli-chickpea combo. Never fails.




I am off to get a good night’s sleep before my big week. I feel like I have a bunch to look forward to!

Friday Trail Ride

This afternoon, I met Kelly for a bike ride at the trail near my work.




Before I left for the trail, I had a CLIF bar in the car.




I came straight from work, and planned on changing at the trail. Since there are no bathrooms at the trailhead, I had to change in the car. I’m hoping that nobody saw!




Since my bike has a flat tire, Mark let me borrow his bike. Thanks, Mark! I haven’t had the time to change my tire out yet.




I got off work a little earlier than I expected, and got 4.0 miles in before Kelly got there. Once she got to the trail, we biked another 15.0 miles together.


Altogether I biked 19.0 miles, but I’m not sure of exact time. We went for a pretty leisurely ride, around 12-13 mph. It was great to chat with Kelly and I didn’t mind a slower ride!




Once I got in the car, I realized that I was really, really hungry! With traffic, my commute home is almost an hour. A hungry stomach is no fun, so I stopped at Publix for some lowfat chocolate milk.




Even though I just ate a veggie burger and “fries” last night, I was craving it again tonight! This time, I wanted sweet potato fries… my favorite!




I ate pretty quickly because I’m heading over to Mark’s apartment. He’s moving to a house tomorrow and I offered to help him move. Off to get some sleep!

Girls Night and Veggie Dinner

Last night, I went over to Caitlin’s for a girls night in.




She only lives a mile down the road, and pretty soon she will live 500 miles away! It sucks when good friends move away.


Caitlin offered to make me dinner for me tonight, so I headed over for some food, wine, and chatting. I had this very large glass of wine. It’s tricky!




I told her that I was craving veggies, and she made me a plate full of them! YUM!




The best part of dinner was the yucca fries:




I tried them for the first time other other day at Whole Foods, and LOVED them. Caitlin made hers with orange zest, which made it have a great flavor. I need to try making these!


We also had corn on the cob: 



…a side of broccoli




…and half a black bean veggie burger on an English muffin.

After dinner, we painted our nails and watched Sixteen and Pregnant which I find fascinating and horrible.




Girls’ nights are FUN!


I used to have weekly girls’ nights with BFF Debbie when she lived next door. I miss her since she moved to NJ! Lucky for me, she is coming to visit at the end of the month! Maybe I will kidnap her so she can’t leave. 😉

Bikes and Brownies

This weekend has really flown by! I’m sorry that I haven’t been around all weekend, I needed a break from the computer screen! Nothing too exciting happened, anyways.


This afternoon, I went on a bike ride with my friend, Mark. Caitlin and Kelly were supposed to join us on a trail, but bailed last minute. We decided to go anyways!




Instead of driving to a trail, we decided to just ride the airport loop. I got super excited every time a plane flew over. I used to work at the airport, but I still NEVER get sick of seeing them. I always find airplanes amazing.




I know, I’m a nerd. I love airplanes.




We got a late start to the ride, and had to cut it short to make it back before sunset. We rode a total of 13.0 miles in about an hour. The winds were making us SO slow! There had to be gusts around 20mph.




I also saw a random brown cow.




On the ride back, Mark and I were talking about what type of food we were each going to eat when we got home. After discussing various amazing sounding foods, we both decided we were going to make pasta. I suggested we make dinner at my place since we both wanted the same thing.


I bought this new type of pasta, Garden Delight, which has a full serving of vegetables.




We basically started throwing random contents from my fridge into the pot. It started with pasta and ended up with:

  • grilled chicken
  • halved grape tomatoes
  • peas
  • garlic salt
  • lemon pepper
  • smart balance butter



It actually worked out really well! It was fun to throw a bunch of randomness in. The pasta had a great flavor, and I was glad that there wasn’t really any sauce to mask the taste.




Between the two of us, we finished off the entire box of pasta. I had seconds.




YUM! The best part, was that it cost around $3.00 for the entire meal. Yay for cheap eats!


After dinner, we made some delicious-buy-one-get-one-free-from-publix brownies.





I had a little piece with some Cake Batter ice cream. A-ma-zing!




I’m a sucker for sweet stuff! 🙂


Okay, I’m off to finish up some school work before the crazy work week starts! Gaaaah.

Fajita Chili

Every since I got this Harry and David’s Fajita Chili soup mix for my birthday, I have been dying to try it!




We had a little cold front go through yesterday, and it was finally cold enough to justify chili making. Everything you need to make the chilli other than water, meat, and a can of diced tomatoes was already in the bag.


The first step was to rinse the beans, bring to a boil, and let them simmer for an hour. I have never made beans before, I always buy them pre-cooked in a can. It was SO easy!




Next, I used 1/2 lb of lean ground turkey breast (instead of ground beef that the bag called for) and dumped the vegetables and spices in.




Once that was done, I combined the meat, tomatoes, 4 cups of water, and the beans into the pot. I let that simmer for another half an hour or so. Once it was done, I served myself some in a mug. It’s more fun to eat out of than a bowl.




It made about 8 cups of soup! I can’t wait for leftovers.


It had a great flavor. It had a little bit of a kick to it, but nothing crazy. I had some cheese and crackers along with it to fill me up.




I love making homemade soups (or even semi-homemade). It tastes SO much better than eating it out of the can, even though I do that often.
