Suddenly Sore

It’s been a great Sunday!

Jason and I decided to check out the UCF Farmers’ Market. It just started last weekend, so we were unsure of what it would be like.


They had a great selection and the prices were decent.

Since it was only the second week, some reporters were there from the Orlando Sentinel. Jason and I were interviewed and they followed us around and took pictures of us shopping while asking us questions!


I will have to remember to look for the article!

We LOADED up! All of these items were $11.00!!!


By the time we got home, I was STARVING!


Lunch consisted of:

free Chick-fil-a pattie from yesterday, sans bun (it was soggy!)…


…mini sweet potato with brown sugar…


…side of broccoli


… and a nibble of mac n’ cheese leftovers that Jason was having.


Oh yes, we cannot forget the pickle tasting!

Remember my list of foods I am afraid to try? Pickles were one of them!! Caitlin gave me one on Friday to try. EEEEEEWWW!!!


Me no like pickles. YUCKY!


I spent a good part of the afternoon doing homework…


…eating fruit…


..and munching on popcorn.


Jason and I made a HUGE pot of chili for dinner. Jason asked for my help to make a kick butt pot of chili for the ABC cook-off, so expect many chili dinners in the near future!

We used this recipe, and added a few extras. Some CRAZY stuff went in there!

  • Acorn Squash
  • jalapeño pepper
  • cocoa powder
  • beer
  • pinto beans
  • Chinese five spice
  • lime juice


I was unsure of how all the flavors would taste together, so I did a fair amount of taste testing.


While it was simmering on low, Jason and I went on a short stroll around the apartment complex to get the blood flowing in my legs. They have gotten soooo sore all of the sudden!!!

Anyways, once dinner was ready I was barely hungry. I had to try a bit, so I had a little bowl.


It is definitely a MUST TRY! The flavors went together PEREFCTLY!! I was so impressed!


I had a baby brownie for dessert!



I’m now icing my quads, and watching the Desperate Housewives premiere with BFF Debbie!!

My legs are hating me right now… they seem to be feeling worse! They are evenly sore, so I’m not too worried. (If only one hurt this bad, I would be worried that I injured something.)

I’m pretty sure this weekend went by too fast!

Pre-Race Checklist

I think I’m  ready for tomorrow’s 15k!!

I made a little checklist for myself, to make sure I got it all done. Let’s see how I did, shall we?


Pre-Race Checklist

  • Carbs- check!

I’m getting excited! I’m racing again this weekend!!


Miracle Miles 15k and 5k are this Saturday, and I know it’s going to be a blast!


I have never run a 15k race before, but I think it’s going to be really fun. I will PR no matter what my time! 😉


Jason called me around lunch time today to ask me if I would run 3.0 miles with him tonight to practice for this Saturday! (he’s running the 5k!) Of course I said yes, even though I already ran 2.0 miles this morning.

Before our run, I had a Kashi Pumpkin Pie bar:


Didn’t hurt my tummy! Yay!

I tried to cram a whole bunch of veggies into dinner, so I made black bean veggie burgers.. (I ate 1.5- so good!)



  • 1 cup black beans
  • 1 egg
  • bread crumbs
  • onion
  • broccoli
  • scoop of brown rice
  • paprika
  • garlic salt

I blended them together in the blender and hit “pulse” a few times to break everything up. Then, I separated them into four patties and heated them in a pan! They were quick and easy!

On the side…homemade sweet potato fries


…and broccoli!!


Perfect post run meal! (Yeah, that’s a lot of ketchup.)

Time to catch up on the Biggest Loser!

I feel like I got so much exercise today because I did a two-a-day, but on the Biggest Loser, I feel like they work out 24/7!!! How do they do it?!

Afraid to Try New Food?

Normally waking up is a breeze, but today I was quite tired! I still managed to drag my butt out of bed and into the gym.

I ran 2.0 miles on the dreadmill, and did about 15 minutes of free weights. I am LOVING lifting weights! I feel so strong. 😀

When I got back, I only had half an hour to get to my 7:30 am class, so I made a quick bowl of cereal:


It had:

  • 1/2 cup Kashi H2H
  • 1/2 cup Kashi GoLean
  • banana
  • 1/2 cup milk
  • 1 TBL flax

I got back around 10:30 am and felt starving! I munched on a handful of the mixed nuts from the ABC expo…


…and a bowl of grapes.


Those two combined actually held me quite well! I didn’t get hungry for lunch until almost 2:00 pm!

For lunch, I tried to recreate the Mega Veggie pizza from the other night at Mellow Mushroom:


It was Delicious, but something about their crust… MMM.

I started out with a whole-wheat pita, buried deep in the freezer. I had to let it thaw first, but it didn’t take too long.


I then added sauce, tomato slices, spinach, and green peppers:


Next layer was broccoli, onions, and mushrooms:


Topped off with black olives and banana peppers.


That’s right… NO CHEESE! I didn’t even miss it.

This may sound CRAAAZY… but I actually never had black olives OR banana peppers until Saturday night. I feel like I’ve been missing out!!

I really liked both! It made me realize that I was always scared of trying them for no reason really. It’s pretty silly!

This year I have tried to venture out and try new things! Examples of stuff I’ve tried…

  • Tofu (love it!)
  • Tempeh (hate it)
  • nuts other than peanuts
  • soy milk
  • cucumbers
  • zucchini/squash
  • eggplant
  • Greek yogurt
  • flax

There are still a few things on my list of “need to try” and some may shock you:

Saturday School

I’m not even sure if I’m awake right now…

Today went a little something like this:

5:30am: Alarm goes off, roll of the bed, Jason yells at me to stop hitting snooze.

5:45am-6:30am: Gym: Run 2 miles while being scared to death by Lady Gaga’s Paparazzi music video… I think I might have nightmares after watching that?! Do a few arm weight machines, and abs.

6:30-6:50am: Shower (didn’t have time to wash my hair, eeeeew), change, pack my breakfast/lunch/snacks

6:50am- Drive my semi-awake self to campus, and eat my Kashi Hot cereal. I would call this oatmeal… but it’s just not the same. I added a banana and some strawberries, and it tasted good, but it’s not oatmeal.

7:25am-7:30am: Hustle to the other side of campus. Game day parking requires me to park way out of the way!!


7:30am-12:00pm: First half of class. By the way, I’m taking this Saturday class as a refresher course before the FE. The FE is in 5 weeks… gaah!!! It’s not mandatory, but it’s really dumb if you don’t take it. Obviously.

10:30am: Snack #1, crunchy/obnoxious apple! 😀


12:00pm-1:00pm: Lunch break! Highlight of my day!… now if only we had nap time and recess. Hmm…

I packed leftovers from Thursday, which you didn’t see because I took the night off blogging. Here’s the pretty version (from Thursday). Mine was in a sweet little tupperware, and I ate it cold. Tasted good actually!

Baggie of peanut m&m’s… the sugar helps me stay awake!! 😉 My reward for busting my ass on a Saturday. Don’t you dare judge!!!


5:30pm-6:00pm: Drive to Mellow Mushroom to meet Sarah, Meghann, RyanAshley, and Lindsey!


We all split two medium Mega Veggie with no mozzerella cheese pizza.


I had two slices



It was great seeing the girls again, and meeting Sarah!

After dinner, we hit up Jeremiah’s, a local italian ice place!


It has been too long!! I ordered my typical stand-by, Scoop Froggy-Frog (mint chocolate chip with swirl ice cream).


I honestly contemplated going straight home and putting PJ’s on. I am SO tired (and was so tired) from class all day. I’m glad I went out tonight! Life is too short to work hard and be boring!

See you in the morning! I have a 12.0 miler planned with Caitlin and Meghann!

Cheesy Love

I’m not going to lie, it feels slightly odd making dinner at 3 in the afternoon. I would rather have good wholesome food to bring with me to school than to eat crap and pay alot of money for it!

Anyone else agree with that?

We are running low on green veggies, but have TONS of spinach left from my Sam’s club trip. I decided to make do, and use as much spinach as I possibly could in tonight’s dinner.


I made a delicious pasta salad, that ended up being quite colorful and photogenic!!


I combined:

  • 2 servings of tri-color spiral pasta
  • 1 cup great northern beans
  • 1 oz of feta cheese
  • sundried tomatoes
  • 3(ish) cups of spinach, sautéed down to almost nothing!
  • basil
  • garlic salt
  • drizzle of EVOO

It made enough for two meals, and split them into two containers. I brought one with me, and saved the other for Monday night. I ate 2/3 of this on my 15 minute break, and had to wait until after my class got out at 9:30 to eat the rest.


I took a LOT of photos…didn’t it turn out pretty though?


I also snacked on an old favorite, PB and pretzels!


Jason and I used to share an office when we were interning (before we were dating) and I used to keep pretzels and a jar of PB in my desk and whip it out every day. He started asking for “samples” until the jar finally ran out and we bought a jar together. Our first item ever purchased together!! A jar of PB!! 😀

It has been “our snack” ever since… awww, cheesy love moment!


Do other people have cheesy love moments or am I just super sentimental?

Whole New Boyfriend

The boyfriend and I just got back from a run, and guess what? Jason ran further than he ever has before, 3.75 miles! The most he has ever done is a 5k! I’m so proud!!

He has been training to run this weekends 5k with me. Tonight was his long run, so I went with him for motivation. His goal for the race is to just finish, so we ran at an easy 11:00 min/mile pace, and picked it up to 9:30 over the last mile or so.

I am seriously SUPER proud of him! He has been working hard, and is improving so much!

He commented on our walk back to the apartment that running and eating healthier is making him have more energy and he doesn’t feel the need to come home and nap for two hours every day! He also asks for broccoli and fruit in his lunch…umm… who is this boy, and where did the old Jason go?


This afternoon, I paced myself through homework and still managed to have time to make some homemade granola!


I made Apple-Oats Granola and served with plain fat free yogurt . So good!


I got into my study groove and never really took another break. When Jason got home, I changed for our run, and grabbed a banana on the way out the door.


Jason, on the other hand, thought that a giant plate of cookies was a better pre-run snack.


No worries, he didn’t eat all of those, he just didn’t want to dirty another plate (so he claims).


After our run, I was craving grilled cheese and tomato soup, but we didn’t have any cheese left.

I settled with tomato soup… (V8 tomato herb, Campbell’s has HFCS!)


…homemade bread…


… and grilled zucchini circles (I ate them with my fingers!)


Clean. Simple. Just what I was in the mood for!


I’m off to finish my hydrology assignment… and snag a cookie out of the kitchen! 😉

I love that Jason asks me to run with him. He doesn’t even know how happy that makes me! Do you inspire your significant other to run? Have they inspired you?
