Cinco De Mayo: Bean Burgers

I really wanted to post last night’s fabulous dinner right after I ate it, but somehow I lost the memory card for my camera between the time that I cooked and was ready to blog.

 

Good news, I found it! It feel between the couch cushions. 😀

 

Last night’s dinner was inspired by cinco de mayo!

I made Mexican bean burgers

…semi-homemade guacamole

..and served with tortilla chips and Organic salsa.

I found the recipe that I based my burgers off of on my iPhone. A co-worker recommended that I download the All Recipes Dinner Spinner App for meal ideas.

Here is what I ended up with after slightly altering the original recipe:

Ingredients

  • 1 carrot, chopped up in evenly small pieces
  • 1 (15 ounce) can kidney beans (or other bean would work), drained and rinsed
  • 1/2 green pepper, chopped
  • 1/4 onion, chopped
  • 1 cup organic salsa
  • 1/2 cup dried bread crumbs
  • 1/4 cup whole wheat flour
  • salt, pepper to taste
  • 1 pinch chili powder

 

Directions

  1. Place carrots in bowl with a small amount of water in the bottom of the bowl. Microwave for two minutes, or until its soft.
  2. Mash beans and carrot together in large bowl. Mix in the remaining ingredients.
  3. Form into 8 patties and fry in skillet over medium-high heat.
  4. Top with guacamole, sour cream, cheese, salsa, lettuce, or whatever else sounds good!

I love experimenting with new non-meat meals, especially bean burgers! I feel like they are so filling and I don’t miss eating meat at all. (No, I’m not a vegetarian but I try to limit meat consumption.)

Good morning!

 

I wish that I had news to tell you about yesterday’s interview, but I am going to wait until I actually have something to share!

 

Last night, I went to Mark’s new house after class. He offered to make me dinner, and I gladly accepted. I forgot my camera so I had to take pictures with my iPhone, so pardon the blurry photos.

 

Mark made:

 

  • sundried tomato chicken with peppers
  • green beans
  • spiral pasta with broccoli and cheese

I wish that I had an iPhone app that could make me dinner. I am semi-addicted to the iPhone.

In fact, I would LOVE to invent an app that:

  • cleaned my apartment
  • made dinner
  • did my homework
  • printed money
  • dispensed candy
  • muted people who are annoying that say things like “oh my god for real? like totally”

 

Yep. Sounds perfect.
