One final down, two more to go…and a project that I haven’t started.  At least I have until Monday!


For the first time in… a LONG time, I finally blogged an entire days worth of food! My exam started at noon, so I ate a very early lunch:




I had a veggie burger, carrots and snap peas, pita chips, with hummus. I’ve been eating tons of these Dr. Praeger’s Veggie burgers, and I love them! They are yummy, but fall apart really easily.

I made an “A” with ketchup hoping it would be good luck for an “A” on today’s final.  A girl can dream!


I have TONS of hummus to use up. Caitlin brought this to me a few weeks ago after a shopping trip to Costco. I need to come up with more uses for hummus besides a dip for chips and veggies. Any ideas? I’m not feeling very creative.




This afternoon, I had a bit of a sweet tooth. Instead of digging into my Easter candy stash, which I was tempted to do, I blended up a healthy smoothie made up of berries, banana, and yogurt.

It’s kind of awesome that he makes me dinner all the time now. Not going to lie. Thanks, pal!

Running is SO 2009.

I am starting to really love biking!




I really haven’t run more than a handful of times since the marathon in January, and I actually am pretty okay with it. I miss it, but not too much. Biking is the new thing; Running is SO 2009. ;) 


This is my third bike ride of the week! I biked 7.5 miles on Wednesday night, and another 15 miles with Caitlin on Thursday.


I debated riding the usual route near my apartment for time saving sake  (I have TONS of schoolwork that needs to be done) or heading to a trail. The trail is 25-30 minutes away, and involves packing up the bikes, driving, etc. However, it is a weekend and I wanted to feel like I was doing something fun and not just exercising to burn calories. Yuck!




Heading to the Seminole-Wekiva trail was a wise decision. The change in scenery was nice, and the weather was perfect. The shade helped kill some of the wind that we’ve been having, and it made for an amazing ride!




I brought along my favorite biking buddy, Mark. (Is this an ad for something!?)




We had fun looking at the cows…




…and just being outside on such a gorgeous day!




The entire trail is 14.0 miles each way, but we turned around after 8.0 miles because my stomach was growling. Lame!


We took a break and split a packet of Sharkies, but I don’t think it did anything…




We still ended up riding 16.0 miles. Our average speed was around 13 mph, but we kept doing sprints (racing each other) and at one point got the bikes to 27 mph!


Once we got to the car, I tried to eat half of this Koka Moka PRO BAR




…but I HATED it. It tasted like a Brownie CLIF bar dunked in stale coffee. I was sad, I thought I would like it!


Side Note: Mark says I take WAY too many pictures of him while biking… I can’t help it!!!





As I got closer, Mark says, “Ok, come on, Meg… give me the camera. I think there are plenty of pictures of me with this helmet on already.” EPIC!




It was quite amusing.


We picked up Publix subs on our way home. I usually get the exact same thing, but I switched it up this time:



  • Ham
  • Cheddar cheese
  • honey mustard
  • tomato
  • lettuce
  • green peppers
  • onion


It was pretty good! I saved the other half for later in the week. It’s cheaper to get a whole than a half…


We also got a fresh pineapple! I had no idea how to cut it, so I let Mark do it.




I ate most of it… oops.




I’m off to get ready for a blogger meet-up! I can’t wait!

Lunch by the Lake

Things have been pretty boring in my world the past few days. Without running or much school work to do, I’ve just been being a bum for a bit.


I made muffins this morning, using a Trader Joe’s Triple Berry Bran mix. I bought the mix when I was in Ohio over winter break, and decided to try them out.




I made them according to the box directions, but added a bunch of craisins (dried cranberries). Best decision ever.




I crumbled one on top of vanilla Oikos yogurt, added a kiwi, and an apple. It made for a delicious breakfast.




I wanted to get out today and clear my head for a bit, so I headed to Moss Park in Orlando.




I took a walk to the Split Oak which ended up being about a 4.5 mile walk.





After my walk, I headed down to the lake for a picnic lunch.




I had a turkey and cheese with all veggies sub from publix




A few handfuls of pretzels…




…which by the way, are shaped like footballs!




…and a tangerine.




As I ate my lunch, I thought about the Moss Park Triathlon relay that Ryan, Caitlin, and I participated in back in July.


Today at the Lake…



Back in July, at the same lake…




While reminiscing, I failed to realize the cranes sneaking up on me. I heard a noise behind me and slooooowwwly turned around and BAM… this guy was looking right at me.




He brought along a friend. Apparently they wanted my pretzels. I don’t know if birds are supposed to eat pretzels, but they seemed to like them!?




Oh gosh, am I turning into the bird lady!?!




Nah. 😉


It was nice just to get out and enjoy the nice-ish weather- it started to drizzle right as I was leaving. I’m really thankful for peaceful times in life, and today was one of those days.

10k Trial Run

I had the best training run ever!

I’m signed up for a 10k Turkey Trot on Thanksgiving day (a week from tomorrow!) and I really wanted to see where I was speed-wise. Yesterday’s 4.0 miler was not too bad, but it wasn’t easy either.

This morning, I decided that I would let my BODY do its thing, and not let my mind get in the way.


I pounded out 6.2 miles (10k) to get a base time for next week. My legs felt SO fresh and ready to run fast!

I was so afraid that after such a big break (for me) I would have trouble getting back in. I realized that 90% of it was mental, only 10% physical. Everything felt the same, except for my mindset.


I finished my run in a total of 51:27!!! It rocked! I was smiling from ear to ear. 😀

Before I left, I grabbed a hunk of CLIF bar on the way out.


When I got back, I took care of the toes… and got to making breakfast.


It was the quickest thing I could think of:

  • Granola
  • milk
  • flax
  • strawberries




For lunch I really needed to use up an eggplant that’s been here since last weekend’s trip to the farmer’s market.

First, I sprinkled the pieces with a bit of balsamic vinegar, then sprinkled salt, pepper, garlic, and thyme on them. I grilled the slices on my George Foreman for a few minutes on each side.


Along with it, I had some spaghetti, with fire roasted sauce. I know its boring, but I really like spaghetti!!!




I need to get to work on packing.

I leave for New Jersey at 6:00 am!!! I can’t wait to see my BFF Debbie!! 😀

Sorry Doc, that’s Just NOT Gonna Work for Me.

I had to make lunch in a rush this afternoon.


It was quick and easy…


Ham, Cheddar cheese, lettuce, and mustard on a sandwich thin.


With a side of strawberries.

I was in such a hurry, because I had to go to my post toe surgery follow-up appointment. It was actually scheduled for December, but I was getting antsy about not running, so I asked to come in early.

Once I arrived, the nurse took a look at my toes and said they were healing up and looked great! She told me what I needed to do to continue to keep them free from infection, etc.

The doctor then came in and said, “looks good! Only about 10 days before you can run again!”



What did he just say? I thought I could run in 2 more days?!!?!?!!?

My response: “I’m sorry, that’s just not going to work for me. It’s been 12 days already!! I am TRAINING FOR A MARATHON”


He stared at me like I was a crazy person. After talking for a few minutes, he said it was OK to run… but ONLY if I followed these careful steps:


  1. Shoes: Only wear closed toed shoes for the time I am running. Take them off immediately after running. Wear flip flops with bandaids on toes all the other times
  2. Epsom Salt: after running, I have to soak my toes in warm water and epsom salt.
  3. Clean: I have to scrub the area with a baby-sized toothbrush… sounds weird, and it is.
  4. Dry Thoroughly: Moisture will invite infection into the wounds
  5. Re-Bandage
  6. Call: At any sign of infection or pain, obviously stop, and call him.

It’s going to be a process… but it’s worth it!




I came home and skipped happily through the apartment. I also munched on some cereal Quaker Crack straight outta the box.


I packed a granny smith apple with peanut butter to bring to school:


Once I got home, it was already 10:00pm. I was craving mac n’ cheese for some reason… so that’s what I made!

…with a side of veggies.




I also made brownies for the boyfriend. He’s not home yet, so they are a surprise! 😀


I’m sure I’ll be having a brownie soon, and probably a glass of milk.  The apartment smells amazing!


Do you follow the doctors’ orders, or do you rebel? I think it’s best to tell them the truth, so they can work with you, otherwise you are just hurting yourself!

Relaxing Sundays, I Miss You!!

I hope I don’t sound like a broken record. I worked on projects pretty much the entire afternoon.

Around 2:00 pm, I decided to take a break [from the oh so fascinating Roman aqueducts] for lunch. Last weekend I had the BEST salad at Infusion Tea. I saw Lindsey recreate it, and I thought, “hey I could do that!”

I gathered my ingredients…


…and set out to make a balsamic reduction sauce.


I have never attempted to “reduce” anything, so I made sure to ask Lindsey for instructions.


I mixed 1/4 cup organic balsamic vinegar with 2 tsp honey. I boiled it until it made a syrup.


On top of the bed of mixed greens, I added:

  • Sliced Pear
  • craisins
  • gorgonzola cheese
  • balsamic vinegar/honey reduction

I also had a multi-grain sandwich thin with peanut butter. YUM!


I snacked while I worked.

I had Oikos and Quaker Squares…


..and the rest of the cantaloupe.


I’m still chugging away on my project and presentations, so I needed something speedy for dinner. I’m not a huge fan of eating processed frozen food, but it’s better than fast food… or nothing.


I tried Amy’s Kitchen: Asian Noodle stir fry.


I added some sesame seeds for a little crunch, otherwise it was pretty good!


I’ve been working all weekend! I miss relaxing…and running.

I have an 8-minute presentation to give in the morning. I better get practicing!

Just Another Friday

Today has been a very productive Friday! I’m hoping to continue this through the weekend… I have so much to get done.

I broke from my project when JasoNerd texted me to meet him for lunch. He works at the airport, which you have to go through security to get into, so he NEVER leaves for lunch. I’m not even sure if he eats… poor thing.

It made my day to see him randomly! 😀

We met at Panera Bread for a quick bite. I ordered the you-pick-two combo, which I love because you get to try more than one thing!


I had a cup of the Garden veggie soup


…and a “half” Fuji Apple Chicken salad, that could have easily been a meal in itself. It was HUGE!


The salad included:

  • All-natural citrus-herb chicken
  • mixed field greens
  • romaine lettuce
  • vine-ripened tomatoes
  • red onions
  • pecans
  • Gorgonzola
  • apple chips
  • white balsamic apple vinaigrette

SO good. I ate EVERY last bite!


This afternoon consisted of…

  • More Design Project


  • Tons of Laundry


  • Tangerines (x2)


  • Choco-walla bar– I really liked it!


  • Two Candy Corn Kisses



By 6:00 pm I was so sick of sitting I decided to head to the gym for a quick run bike ride. I tried to work a little bit harder this time, but I’m not sure that I did…

  • Time: 30:00 minutes
  • Average Heart Rate: 127 bpm
  • Max Heart Rate: 153 bpm
  • Calories burned: 175

It felt great to move my legs! I wonder how they will feel in 6 days, when I can run again?!



I really wanted to do something different for dinner tonight. I saw Tina make a sausage, spinach, and provolone pizza the other night, and really wanted to try it out. Luckily, we had everything in the freezer/fridge to make it!

We used Naan as the crust of our pizzas. I topped mine with 1.5 slices of provolone cheese…


…and a sautéed organic chicken sausage (Greenwise/Publix Brand), two handfuls of spinach, and half a small yellow onion.

Nom. Nom.


Jason took the picture, clearly he thought his pepperoni man pizza deserved center stage.

I ate half of my pizza, since it’s already SO late (10:30 pm) and I do not need a full pizza in my tummy before bed!


However,  cup of hot cocoa never hurts. 😉


My alarm is set for 5:00 am. I’m taking pictures of my running buddy Caitlin at her half marathon tomorrow! I’ll be sure to post plenty of pictures in the morning.


I’m excited to be a spectator in a sport I usually always participate it. Good night! 😀
