I Hope These Groceries Last

Remember earlier, when I showed you the empty fridge?

Well… Look at it now!!

I spent just short of $100 on groceries (for two) between Whole Foods and Publix. I got SOOO much stuff tho!! It wouldn’t even all fit on the stove!! I think that we won’t have to get much for about a week and a half lol!!

I got so much because we basically had nothing left when we got back from our trip.

Even my veggie drawers are nicely stocked.

When I got home from the store…. I was RAVENOUS!! I put all the goods away and whipped up a nice summery-salad.

My salad included:

  • 1 cup Earthbound Organic mixed greens
  • A few melon chunks cut up
  • 3 sliced strawberries
  • 1/2 cup grapes
  • 1 oz. Reduced Fat Feta cheese, crumbled
  • 1/2 oz. Walnuts
  • a few honey roasted chicken strips

I promise there is lettuce in there somewhere!!!!

I made the same salad on a whim before I left, and I liked it so much!! This time though, I didn’t put in the Craisins or Pecans, I added Chicken pieces and walnuts. I prefered the cranberries in it though.

Once I mixed it up you could see the greens. ( I had to dump it in a bigger bowl first). I then topped it with 1 Tablespoon of Trader Joe’s Sweet PoppySeed Dresssing… MMMM.

LOVE IT.

Other snacks include:

I also picked up some Adora Calcium Supplements while at Whole Foods. It’s a small piece of dark chocolate with 50% of your daily value of calcium. I have been seeing them around the blog world and they seemed like a tastier option than my usual chalky calcium chews.

It tasted like a regular piece of dark chocolate!! I’ll do a review of this product once I have a better feel for it. πŸ™‚

An Empty Fridge and a 10k

Good morning! Happy Thursday!! It’s so nice to wake up in my own apartment.

It took a few minutes of scrounging around in the freezer to come up with something to eat this morning. I put the rest of my blueberries and raspberries into the freezer before I left on the trip so I used those to top two frozen nutri-grain waffles.

Not too shabby for a freezer find. It would taste better with fresh fruit obviously but I have pretty much no food left in my apartment (with the exception of pasta, cans, etc in the pantry and a few odd ball items in the freezer.)

My poor fridge is empty. It’s longing to be filled!! I desperately need to go grocery shopping!! Since I still have a few days off before I start working, I think I might stock up at Whole Foods and Publix before things get crazy.

Pretty Lame, Huh?

In running news:

I have decided that I will run the Moss Park 4th Annual Forest Run, on August 1, 2009. It’s going to be hot, hot, hot!! I think it will be fun, and a great challenge. I have only raced one 10k back in October of 2007. I signed up for another a few months ago, but slept through it. UGH!!!

I think that the 10k could be a great distance to run. I have excelled at 5k’s and half marathons so this will be right in between!! A great combination of distance and speed. I don’t want to have too high of expectations but I would still like to do well. I will be posting a training schedule within a few days once I get one made up. πŸ™‚

Ok, well off to run errands and do some necessary laundry!!

What is your favorite distance to race?
