Books and Bowls

Look what I found!

While out running errands on Friday, I spotted Caitlin’s book: Operation Beautiful! I’m pretty sure I screamed when I saw this sitting on the shelf, “MY BFF wrote this!”

I started reading the first chapter, and so far it is absolutely amazing. I am so proud of my friend for her accomplishments, and for continuing to inspire others. I can’t wait to read more!

The book officially comes out on August 3, but for some reason I was able to find it early at Borders.

On Friday morning, I treated myself to a new kind of breakfast. I was out of fresh fruit (only frozen) and decided to try something new.

Smoothie in a bowl + Cereal:

In a blender, I combined:

  • 1 cup milk
  • 1 frozen banana
  • 5 frozen strawberries

On top, I added some Kashi Crisp cereal. Light, refreshing, cold, and crunchy. What could possibly be a better summer combination?

I loved it so much, that I tried another version of the smoothie for dessert last night: with white chocolate chips! It was an extremely healthy ice-cream treat alternative.

Have you tried a smoothie in a bowl? What would be your choice of toppings?

Operation Beautiful UCF

I stuck around after classes a bit later tonight. Caitlin came to UCF to speak about Operation Beautiful!

Before the event started, I met up with Kelly. We were so excited to support our friend, and they even interview us about what we thought of Operation Beautiful.

I was VERY impressed with how the event turned out. Caitlin did a wonderful job, and both Kelly and I were very proud of her! She spoke confidently and got the audience very involved. Everyone was freely discussing and seemed to really enjoy it.

I really had to think hard about some of the answers on my “personal credit card”. I realized that I really do have a lot of things that I like about myself. It’s always best to focus on the positive.

The best part was the free t-shirts that say “I ❤ My body”. How adorable! They even had blue ones for the guys (or girls that don’t like pink).

I’ve been seeing all sorts of little notes around campus. It’s great to see the message spreading.

My day felt extra positive!

Don’t forget to smile. 😀

Quick Start

Good morning!

It’s another super busy day in MegaNerd World!

I made a quick and light breakfast before I left the apartment. Green smoothie with banana, ice, milk, and spinach. Plus, two slices of peanut butter toast.

..mmm… Peanut butter.

I have tons of stuff to get done in a short amount of time. Must. Get. On. It!!

I’m hoping to make it over to the UCF Student Union in time to see Caitlin speaking about Operation Beautiful! I’m so excited for her!

(A note I left in the gym bathroom…)

Will anyone else be coming out to support Caitlin!?

Cookie Dough

Last night, I made a ridiculous amount of cookies. As in, this tupperware times two!

I ate about four cookies worth of dough until I had a tummy ache. It was so good and hard to resist! I can’t wait to get these cookies out of here!

As Lindsey said, “life is not complete without cookie dough!” 😉

I was up pretty late with my baking adventures, so I slept in. I hit the gym for a quick 20 minute elliptical session and some arm strength training moves.

It was the perfect excuse to catch up on my Runner’s World reading!

On my way out, I left an Operation Beautiful note on the bathroom mirror. I haven’t left one in a while!

After my strength session, I was craving protein! With our massive Sam’s club carton of eggs, I figured omelets were the perfect solution!

My omelet had:

  • 1 whole egg
  • 1 egg white
  • tons of spinach
  • tomato
  • onion
  • cheddar cheese

Have a great Labor Day weekend!
