Apple Oat Granola Recipe

Good morning!

I woke up this morning feeling super rested! I went to bed early, and was able to get an extra hour of sleep since I’m not running again until Saturday’s 5k!

I think that my body benefits from a bit of rest and extra sleep before a race. I also just feel mentally more ready to run, because it’s been a few days. Make any sense?

 

My homemade granola was the star of the show this morning! The apples make it feel like fall!

My bowl contained:

  • 1/2 cup plain Stonyfield Organic yogurt
  • 1/2 cup Kashi H2H Cereal
  • 1/4 cup homemade granola
  • black berries (I still have sooo many!)

Apple Oat Granola

Ingredients:

  • 2 cups old-fashioned oats
  • 1/2 cup Walnuts, chopped (optional)
  • 1/8 tsp salt
  • sprinkle of cinnamon
  • 1/4 cup apple juice concentrate, thawed
  • 2 TBL honey
  • 1 tsp canola oil
  • 1/4 cup diced dried apples
  • 1/4 cup raisins
  • 1/4 cup cranberries

Directions:

  1. Preheat oven to 350 degrees F.
  2. Spray cookie sheet with cooking spray.
  3. Combine oats, nuts, salt and cinnamon in a large bowl.
  4. In another smaller bowl, whisk together apple juice, honey, and oil. Pour into the oatmeal mixture and blend with your hands to make sure its all covered.
  5. Spread out on the cookie sheet and pop into oven.
  6. Bake for 25 minutes, or until brownish. Stir every 5 minutes so that it cooks evenly.
  7. Toss with dried apples, raisins, and cranberries.

 

Makes 10  1/4 cup servings!
