10k Trial Run

I had the best training run ever!

I’m signed up for a 10k Turkey Trot on Thanksgiving day (a week from tomorrow!) and I really wanted to see where I was speed-wise. Yesterday’s 4.0 miler was not too bad, but it wasn’t easy either.

This morning, I decided that I would let my BODY do its thing, and not let my mind get in the way.

I pounded out 6.2 miles (10k) to get a base time for next week. My legs felt SO fresh and ready to run fast!

I was so afraid that after such a big break (for me) I would have trouble getting back in. I realized that 90% of it was mental, only 10% physical. Everything felt the same, except for my mindset.

 

I finished my run in a total of 51:27!!! It rocked! I was smiling from ear to ear. 😀

Before I left, I grabbed a hunk of CLIF bar on the way out.

Lunch

For lunch I really needed to use up an eggplant that’s been here since last weekend’s trip to the farmer’s market.

First, I sprinkled the pieces with a bit of balsamic vinegar, then sprinkled salt, pepper, garlic, and thyme on them. I grilled the slices on my George Foreman for a few minutes on each side.

Along with it, I had some spaghetti, with fire roasted sauce. I know its boring, but I really like spaghetti!!!

I need to get to work on packing.

I leave for New Jersey at 6:00 am!!! I can’t wait to see my BFF Debbie!! 😀

Bundle of Nerves

This morning, I had to give an 8-minute presentation in my hydrology class. It could be on any topic related to water (quality/control), which meant I was free to choose pretty much anything.

I’m NOT a huge fan of public speaking, mostly because I have barely any practice. I sit at my computer or in front of textbooks calculating stuff all day.

I was SO nervous beforehand. Even though I practiced at LEAST 8 times last night, it was totally different. I was well prepared, and had no reason to be so terrified. My heart was like racing, and my stomach was filled with butterflies.

Once I got up to present, I took a deep breath, and dove right in. I felt really confident, and people seemed like they were actually paying attention! Hopefully  I did well. It was so nerve wracking!

I’ve got a lot going on right now. I was up until 2:00 am working on various school projects.

I had to wake up at 5:30am to make it to my class, so it was a coffee morning for me!  I’m sure you know how it goes.

My tummy was growling by 10:00 am. Obviously it was way to early for lunch, so I had half a White Chocolate Macadamia Nut CLIF bar.

Forced Eating Schedule

I feel like lately my eating schedule has been well… all over the place!

I got hungry for lunch at 11:00 am. I decided to make something that would take a bit of time so I would be forced to wait until a more normal (for me) lunch hour. I had half a block of leftover tofu to use up, and a bell pepper on its last leg.

I created: Tofu stuffed bell pepper!

  • Half a block of tofu (only used half of what I cooked)
  • steamed spinach
  • cheddar cheese
  • leftover israeli couscous
  • red bell pepper

I cooked the tofu, mixed with the other ingredients, stuffed it all in the pepper, and baked for 20 minutes.

Only about half of the mixture fit inside the pepper, so I ate the rest of it while the pepper baked.

I had a container of Vanilla Oikos, 1/2 cup Kashi H2H, pom arils, and blueberries. YUM!! It held me for about four hours, until dinner part two:

 

I got home from class at around 9:30 pm.Luckily, I planned ahead and thawed out some butternut squash soup.

I didn’t think that sounded filling enough, so I heated up the leftover tofu to go along with it. (I ate half a block of tofu in one day…)

I don’t really like having to split my meals up like this for a few reasons:

1. I don’t feel like eating something large at 4:30 pm when I leave.

2. I feel like I eat way more because I get home and I’m STARVING!

 

No matter what I try, I seem to always leave for class feeling stuffed, and get home starving.

 

My Ideal Eating Schedule would be:

5am (or before my runs)- Snack

8am (after run or when I wake up) Breakfast

11am: Snack

1 pm: Lunch

4pm: Snack (or more snacks if needed)

7pm: Dinner

 

However, life is not ideal. I eat when I have time!! Right now my schedule forces me to eat a LARGE snack to hold me over at around 4:30 pm, and then I can eat again at 10-11pm.

 

 

Do you tend to eat whenever you feel like it, or does your job/schedule force you to eat at random times?

One Week Down, One More To Go

One week ago today, I ran 18.0 Miles!

Three hours later,  had surgery on both my big toes.

 

The doctor said no running for two weeks, while my toes heal! My first week of not running hasn’t been to bad. It was a welcomed mental and physical break for the most part. I even got in a few mini-workouts!

Recap:

Saturday: 15 minutes of core work

Sunday:  rode my gym’s stationary bike for 30 minutes.

Monday: 10 minutes of core work and pushups.

Tuesday: Jillian Michaels Boost metabolism video (which made my hamstrings sore!?)

Wednesday: stretching

 

It’s been a week, and I finally got up the courage to put my sneakers on. I have been cringing just thinking about doing this…  (By the way, look how dirty they are now?!)

The weather is pretty cold (for Florida) and quite gloomy.

I set out to take a walk, and honestly it was probably a bad idea. Not because it hurt, I felt GREAT! However, it was such a tease not being able to run.

I honestly wanted to cry. My muscles are rested and ready to go. My brain is done taking a mental break. The weather was cool and I wanted to RUN!! I’m really frustrated that I am in the middle of training for my first marathon, and cannot run.

Silly toes. One glance at them, and it’s clear they aren’t healed. I will spare you a picture.

I keep telling myself, only one more week. I’m halfway there.

 

Breakfast

I came back from my short walk and made some oatmeal. It was the perfect morning for a warm breakfast.

My bowl of oats had:

  • 1/2 cup Oats
  • 1/2 cup Milk
  • 1/2 cup water
  • Brown sugar
  • almonds
  • blueberries
  • coconut

I think I put too much coconut (it was a little too sweet), but it was still pretty good!

I am actually learning some valuable lessons through this experience. It’s frustrating, and I hate it, but I think that some good has come out of it. I plan to discuss this in the next couple of days.

I have a boat load of work to get done by Monday, and it’s time to get crackin’!

Meals on the Go

I had to say goodbye to my little sister this afternoon. 😦

 

Before we left for the airport, I made a Mexican themed lunch:

I had a cup of black bean soup

…and a salad.

My salad included:

  • romaine lettuce
  • green bell pepper
  • crumbled chips
  • Grilled chicken breast
  • cheese
  • salsa

On the way to test number two of the day, I ate a CLIF bar mini in the car. I almost brought a Pumpkin pie Kashi bar, but I have missed the Brownie! Jason always steals them, but this one was buried in the bar stash! 😀

I also stopped at D and D for some Latte love! 99 cents, can’t beat it!

I packed my dinner in a little Fresh n’ Fit container that I have actually had for a while, but never use. It comes with an ice pack, and individual compartments for snacks. In case anyone is wondering, I found it at Target.

In the main compartment I packed a turkey and cheese sandwich. The ice pack fits over the sandwich area, and rests on little “shelves” so it doesn’t squish the sandwich.

I filled the top two containers with fruits and veggies: one with carrots and peas, and one with strawberries.

Each of those fits into the groves on the ice pack…

…and closes with the lid!

It kept my food cold (for 6 hours) without having to pack the whole bulky lunch cooler! I really liked using it!

Slept Through My Run

I forgot to set my alarm last night to wake up early enough to run. 😦

I have 4.0 miles on my marathon training plan and I slept through it! I have a TON of stuff to get done today (mostly on campus) and I just didn’t have time to run, shower, and be back in time for class.

My breakfast was a bit rushed, but still yummy! I made a bowl of Kashi Heart to heart, with fat free milk, and strawberries:

Looks like I’m going to have to get that run in after class tonight!!

I usually prefer running in the morning, because it gets too hot otherwise. I also have trouble exercising with a full stomach (like after dinner) or when it’s very empty (like before dinner).

I’m usually less motivated when I wait until the end of the day to run, and am always so tempted to skip it. Waking up and getting it out of the way usually works best for me!

Do you prefer to get your exercise in when you wake up, or do you wait until after work/school? What are your reasons?

You Spin My Head Right Round…

This morning, my sister and I decided to do something new!

We took a spinning class at UCF!

Before I left for my 7:30 am class, I had a stabilizing breakfast. I used this container of pomegranate berry yogurt as the base of my meal.

I combined strawberries, yogurt, and a cup of Kashi Go Lean cereal:

My sister came along with me to my 7:30 am class since we were heading to the gym on campus for spinning. She found college classes “so boring” and is glad that she is in school to cut hair and not to become an engineer. We are such opposites!!

Brielle and I split a pumpkin pie Kashi bar on our 0.5 mile walk to the gym.

I haven’t used the on campus gym at UCF in over a year! I always use the one at my apartment, or lift weights at home. It’s quite a nice facility, which I obviously don’t take advantage of.

We got to the 10:15 am class a bit early to make sure we would get bikes. It was a nice surprise to see Sarah as our teacher!!

I really enjoyed doing something other than running. It was a nice change, and made me really miss my bicycle!!

Sarah did a great job of teaching the class. I felt like I was working hard, and working up a sweat. My sister also really liked it because her knees bother her when she tries to run.

As a freshman, I was SO intimidated by spinning classes. The great part about the spin class is you can tailor it to your needs. For example, if you find one of the positions or sprints hard, you can simply sit on the bike, turn it to lower resistance, and recover until you are ready to continue with the class. If it’s too easy, increase your cadence or the resistance on the bike.

I was absolutely STARVING when I got home. I whipped up the first thing that came to mind, a fruit and nut salad:

  • walnuts
  • almonds
  • grilled chicken breast w/ basil and thyme

I topped it all with Trader Joes’ Poppyseed dressing!! I am so thankful that JasoNerd’s brother Zach brought me some more back from Ohio!! 😀
