Meals on the Go

I had to say goodbye to my little sister this afternoon. 😦

 

Before we left for the airport, I made a Mexican themed lunch:

I had a cup of black bean soup

…and a salad.

My salad included:

  • romaine lettuce
  • green bell pepper
  • crumbled chips
  • Grilled chicken breast
  • cheese
  • salsa

On the way to test number two of the day, I ate a CLIF bar mini in the car. I almost brought a Pumpkin pie Kashi bar, but I have missed the Brownie! Jason always steals them, but this one was buried in the bar stash! 😀

I also stopped at D and D for some Latte love! 99 cents, can’t beat it!

I packed my dinner in a little Fresh n’ Fit container that I have actually had for a while, but never use. It comes with an ice pack, and individual compartments for snacks. In case anyone is wondering, I found it at Target.

In the main compartment I packed a turkey and cheese sandwich. The ice pack fits over the sandwich area, and rests on little “shelves” so it doesn’t squish the sandwich.

I filled the top two containers with fruits and veggies: one with carrots and peas, and one with strawberries.

Each of those fits into the groves on the ice pack…

…and closes with the lid!

It kept my food cold (for 6 hours) without having to pack the whole bulky lunch cooler! I really liked using it!

Allergic to Green?

Lunch today rocked.

I ate leftover Mellow Mushroom pizza!!  I cut the slices in half again so it was easier to eat, and also felt like I was eating more.

I contemplated having a salad on the side, but decided I didn’t really want it. I had plenty of veggies as toppings!!

It has:

  • bell pepper
  • broccoli
  • tomato
  • black olives
  • artichoke
  • tofu

My sister and I got a major chocolate chip cookie craving this afternoon. I think the ONLY thing we have in common besides our last name and parents is our dear affection for the classic Tollhouse cookie.

We made the full recipe (5 dozen cookies) but froze half the dough for future use. We used white and regular chocolate chips for something slightly different.

Dinner

Jason brought home stir-fry ingredients for dinner!

I was supposed to go to class at 6:00, but the idea of a warm dinner instead of something rushed and cold sounded AWESOME! I skipped and only went to my 7:30… oops!

Jason did most of the cooking. He cooked chicken and shrimp, and I just chopped the veggies:

  • carrot
  • bell pepper
  • broccoli
  • snap peas
  • bean sprouts

We had thai peanut noodles on the side (x 2… I was hungry tonight!)

I’m surprised that even Brielle liked it!!

My sister told me tonight that she is allergic to green food. Her plate looks SO different than mine:

Her plate looks so boring!! I wanted to sneak a pea on there or something.

Some people think we look alike, but we are complete opposites.

It’s weird though, we are like two peas in a pod… oh wait, she might not like that example since she hates peas. Hmph. I LOVE THEM!

You Spin My Head Right Round…

This morning, my sister and I decided to do something new!

We took a spinning class at UCF!

Before I left for my 7:30 am class, I had a stabilizing breakfast. I used this container of pomegranate berry yogurt as the base of my meal.

I combined strawberries, yogurt, and a cup of Kashi Go Lean cereal:

My sister came along with me to my 7:30 am class since we were heading to the gym on campus for spinning. She found college classes “so boring” and is glad that she is in school to cut hair and not to become an engineer. We are such opposites!!

Brielle and I split a pumpkin pie Kashi bar on our 0.5 mile walk to the gym.

I haven’t used the on campus gym at UCF in over a year! I always use the one at my apartment, or lift weights at home. It’s quite a nice facility, which I obviously don’t take advantage of.

We got to the 10:15 am class a bit early to make sure we would get bikes. It was a nice surprise to see Sarah as our teacher!!

I really enjoyed doing something other than running. It was a nice change, and made me really miss my bicycle!!

Sarah did a great job of teaching the class. I felt like I was working hard, and working up a sweat. My sister also really liked it because her knees bother her when she tries to run.

As a freshman, I was SO intimidated by spinning classes. The great part about the spin class is you can tailor it to your needs. For example, if you find one of the positions or sprints hard, you can simply sit on the bike, turn it to lower resistance, and recover until you are ready to continue with the class. If it’s too easy, increase your cadence or the resistance on the bike.

I was absolutely STARVING when I got home. I whipped up the first thing that came to mind, a fruit and nut salad:

  • walnuts
  • almonds
  • grilled chicken breast w/ basil and thyme

I topped it all with Trader Joes’ Poppyseed dressing!! I am so thankful that JasoNerd’s brother Zach brought me some more back from Ohio!! 😀

Study Free Sunday

Despite the fun I had last night (read: BEER!) I managed to wake up at 7:30 am.

I actually felt pretty good, and decided to go ahead with my scheduled run. I only had 6.0 miles on the marathon training plan. I really like getting my long runs done on Friday, since the weekends seem to get so busy!!

I’ve been doing a lot of long, slow runs. I really felt like running fast today! Here are my mile splits:

  • Mile 1:  9:39
  • Mile 2:  9:04
  • Mile 3:  8:55
  • Mile 4:  8:44
  • Mile 5:  8:37
  • Mile 6:  8:26

Negative Splits… woo hoo!!

I ate half this CLIF bar before, and half after my run.

After my run, I quickly showered and jumped in the car to head to Tampa. I left my sister there last weekend to hang with our dad, and I went back to pick her up. To make the trip not seem so pointless (3 hours roundtrip) we met up with our two aunts and grandma for brunch at Mimi’s Cafe!

By the time we got there and seated, it was already almost 1:00 pm. I was STARVING! I didn’t know that it would take so long, or I would have eaten a normal breakfast before I left.

I started off with a pumpkin spice muffin. I was dying to try this. I ate half of it, and save the other half for an afternoon snack.

I ordered the ham, cheese, and broccoli omelet but I made some substitutions. Instead of ham, tomato. Egg whites instead of whole eggs.

I ate every single bite!!! It was so good!

My meal also came with grapefruit juice, which I found SO sour!! I gave it to Jason…

Brielle ordered the same meal. I think she really liked it!!

It was so nice to see my aunts and grandma again! We managed to chat for over 2 hours!

 

Dinner 

For dinner, I knew that I needed to make my acorn squash! After all, today is the last day to submit recipes for the Blogger Secret ingredient.

I have seen SO many recipes for stuffed squash, I knew I had to try it for myself. I while back, I found Bridget’s recipe and thought it looked good.

I made a stuffed acorn squash for myself! Brielle and Jason were still full from brunch.

I cut an acorn squash in half, and baked upside on a cookie sheet for 25 minutes. I added a little water to the pan so that it would not dry out.

While that was going on, I chopped up 1/4 of a yellow onion, and 1/2 an apple. I threw the onion, apple, and an organic chicken sausage in a pan with 1 tsp of EVOO. Once it was cooked all the way through, I added 1/4 cup of oats and 2 TBL of egg whites.

I filled the squash with the mixture, and popped it back in the oven for 25 more minutes. It turned out delicious!!

All the ingredients reminded me of fall!

Fundamentals of… What Exactly?

I do not feel ready for the FE tomorrow. It’s as simple as that.

I am really not comfortable with a LOT on this test. I’m going to try my best, and go in with a positive attitude! Each exam lasts four hours, for a total length of 8 hours of testing!!

If I don’t pass, I still can try again in April. I am probably making a bigger deal out of this than it actually is, but I just want to get it over with. Plus its $$$$$. It’s possible to pass, but I’m not expecting it. I’ll just guess “C” when I don’t know the answer. LOL.

 

I tried to study a bit more today, but I decided that it was just better to relax. I’ve been studying for four and a half years for this test. I get worked up about it really easily, so I’m chilling out. I made a nice pasta lunch today to keep me out of the office:

I used whole grain penne pasta, broccoli, peas, white beans, pesto, and this little guy:

It was quite a filling lunch!!

However, 15 miles requires extra food.

For my second lunch, I made an entire large sweet potato worth of fries! I don’t mess around with the ketchup! LOL.

After e-mailing with another engineer and friend (we met at the blogger lunch), I realized that I needed to stop thinking about the test, calm down, and relax tonight. Thanks, Gloria!  I had a Sam Adams Octoberfest to take the edge off. 😀

We did the easiest possible thing ever for dinner. I picked up a rotisserie chicken from Publix, whipped up a Caeser salad (with only a smidge of dressing), and mac n’ cheese.

I went back for more salad, and more pasta. Not really hungry but it tasted good.

Delicious, yes. Nutritious? Well… It’s not too bad. I just haven’t felt much like cooking the past week. I can’t wait to get this test over with!!!

Not Goodbye, See You Later

I just said “see you later” to my BFF Debbie. As I’ve been saying, Debbie is leaving tomorrow for NJ and I’m really sad. 😦

I’ve actually known for quite some time but didn’t say anything about it on the blog until a week or so ago, so I’ve had time to “prepare”. LOL.

I’m not going to lie, growing up is hard!

 

Today should have been spent studying for tomorrow morning’s hydrology test, but I couldn’t bring myself to study. I spent all of last week studying, and it got me nowhere. I’m rebelling.

I made a quick lunch before heading out for some errands. Quesadilla with grilled zucchini, leftover chicken, and cheddar cheese.

I ate the zucchini that wouldn’t fit into the quesadilla on the side. Grilled zucchini is so delicious!

During errands, I met up with Meghann. We stopped at Starbucks for some refreshments. It’s flippin’ hot outside!

I had an iced nonfat latte with 2 pumps vanilla. Oh so yummy!

Tonight I was on my own for dinner, which basically means I can have whatever I want! I secretely love these nights!

I tried to recreate the Publix Tuscan Minestrone soup that I had a few weeks ago. It came out different but amazing!

I started with these two soups, veggie broth and roasted red pepper and tomato:

I added some roasted veggies:

  • broccoli
  • onion
  • carrot
  • mushroom
  • peas
  • celery

I boiled some macaroni pasta and spinach… and added in some white beans and thyme. I let it all simmer for 20 minutes or so…

I’m happy to say that I have leftovers! Soup is my comfort food.

It’s so hard to focus my mind on school when I feel like there are one billion other things going on!

 

I’m really sorry to be so “negative nancy” lately. My life hasn’t exactly been very rainbows and sunshine lately. Things have to start looking up soon!!

Just A Big Kid

Sometimes, I wish I could go back to Kindergarten!

Remember nap time, recess, fun snacks, and no tests? That’s the life right there…oh and it sort of describes my afternoon!

I ate a big girl lunch of leftover chili with Kashi crackers. This chili recipe is so amazing. I’m usually not a huge fan of random combos, but this might have changed my whole outlook. No joke.

Later, I snacked on a pear while I studied for Environmental process design…(aka poop sanitation class).

I then proceeded to doze off at my desk for approx 2.5 hours. I accidently slept through my 6:00 class, and woke up around 6:30 pm. OOPS!!! 

Nap time! It’s funny how in Kindergarten I HATED nap time, but now I desperately wish I had it!! Oh the Irony.

After nap time, I made some ants on a log- celery, PB, and raisins. I wanted to keep with my elementary school theme.

Why don’t I make this more often? It’s actually quite yummy!

 

Oh, did I mention that I also rocked my youth choir t-shirt from 3rd grade today? It’s the softest most comfy thing ever. I love it!

 

For dinner, I wanted to use up the eggplant I bought the other day at the farmer’s market. I was REALLY craving carbs, and I was pretty hungry this afternoon so I went with pasta!

I cubed half an eggplant, and sauted it in a pan with a drizzle of EVOO  and minced garlic. I then added in a can of organic diced tomatoes. Meanwhile, Jason made some whole wheat thin spaghetti and grilled chicken on the George Foreman grill.

We made some extras to eat for leftovers this week! The meal combo turned out quite tasty!

Jason isn’t an eggplant fan, so he left that out of his, and used cheese instead. LOL. Typical Jason.

Even though I napped today, I’m still pretty tired. I think I need more than 6.5  hours of sleep at night, especially with all the running I do!  Maybe I will add snack breaks as well as nap and recess into my daily routine.

It’s been a good day.

 

What do you miss most about being a kid? I miss playing outside with the neighborhood kids, making obstacle courses, riding bikes, and going to dance class.
