Lunch Date and Quick Dinner

Hello!

I hope everyone is having a great Tuesday! Every since my run this morning, I’ve been in a good mood! 😀

I’m enjoying my happiness while I finish this post, and then it’s back to studying. I have yet ANOTHER test tomorrow. My life feels like a super long exam!!

 

Lunch

Since Jason’s on the night shift this month, that means he is home during the day with me! Our two year dating anniversary is tomorrow, but since we have other plans/work/classes, we celebrated with a lunch date today!

We used to have lunch together (not always out) every single day before we even started dating. It is a tradition that I miss!

We headed to Nona Sushi, a local Japanese restaurant. I ordered the lunch special, a bento box with hibachi shrimp.

It came with a ginger side salad, which they always put WAY to much dressing on.

I asked for no butter on the shrimp and veggies, and the guy said he couldn’t do it. Umm… I was really confused, and I told him to please use minimal butter. He laughed at me.  Ugh, it was still buttery but it was DELICIOUS! I ate all the veggies, and half of the shrimp.

It also came with a blob of white rice which I’m not a fan of and had no problem leaving it there.

I love love love sushi! I was happy to eat all of these little California rolls. 😀

As good as the outside might taste, it is NOT HEALTHY! I compromised by picking 3/4 of it off, and I still got a bit of the flavor.

It was a great lunch, and I left feeling super full!!

 

I didn’t really need any snacks this afternoon, but I made a green smoothie before I left for class, since dinner was still 4-5 hours away.

My smoothie had:

  • spinach
  • ice
  • 1 banana
  • 1 TBL peanut butter
  • 1/2 cup vanilla soy milk

Jason saw me making it, and wanted half. Being an awesome girlfriend, I gave him half. It was actually just enough to hold me.

 

Dinner

Once I got home from class, I made a quick pasta salad for dinner.

It included:

  • penne pasta (carbs)
  • white beans (protein)
  • peas (veggies)
  • red pepper (veggies)
  • pesto (fats)

I boiled some penne pasta, while I prepared all the other stuff. The entire dish made 11 minutes to make, had only 5 ingredients, and covered all the well-rounded meal basics. Quick meals are a necessity in my life!

I contemplated cereal for dinner, but I’m so glad I took 10 extra minutes to make something more satisfying.

Running on Empty

Racing makes me tired!

As soon as I got home from the race, I made a giant glass of chocolate milk. My tummy felt weird, and I knew that I needed to get some protein and sugar in to start the recovery process.

After I showered and got ready to leave for class, hunger hit me! I made a quick bowl of mac n’ peas!

Did you know that one serving of peas adds 5 g of protein and 4g of fiber!? Way to bulk up the meal!

I STRUGGLED to stay awake in my FE Review class yesterday. The adrenaline rush faded and left me feeling like I had nothing left in me. My “gas tank” was on empty! (As was my car!)

I’m declaring today a Day of Rest! My legs deserve it! They pushed hard yesterday, and I’m pampering them today.

It felt SO good to wake up this morning and be able to relax! No long run to get ready for, no class to rush off to, nothing at all! Granted, I have much school work needing to be done, but it can be put off an hour to enjoy the early morning quiet.

I made a pot of coffee, and enjoyed a leisurely breakfast outside.

I feel like lately breakfast has been SUPER rushed or even force fed (like before long runs and races). I got to eat whatever I wanted and however slow I wanted. It was beautiful!

My goals for the day are:

  • Spend some time with Jason (He’s been neglected)
  • Study for at least 4 hours (two tests this week)
  • Farmer’s Market

Two-A-Day

I’m getting excited! I’m racing again this weekend!!

 

Miracle Miles 15k and 5k are this Saturday, and I know it’s going to be a blast!

I have never run a 15k race before, but I think it’s going to be really fun. I will PR no matter what my time! 😉

 

Jason called me around lunch time today to ask me if I would run 3.0 miles with him tonight to practice for this Saturday! (he’s running the 5k!) Of course I said yes, even though I already ran 2.0 miles this morning.

Before our run, I had a Kashi Pumpkin Pie bar:

Didn’t hurt my tummy! Yay!

I tried to cram a whole bunch of veggies into dinner, so I made black bean veggie burgers.. (I ate 1.5- so good!)

Ingredients:

  • 1 cup black beans
  • 1 egg
  • bread crumbs
  • onion
  • broccoli
  • scoop of brown rice
  • paprika
  • garlic salt

I blended them together in the blender and hit “pulse” a few times to break everything up. Then, I separated them into four patties and heated them in a pan! They were quick and easy!

I feel like I got so much exercise today because I did a two-a-day, but on the Biggest Loser, I feel like they work out 24/7!!! How do they do it?!

Stressful Sunday

Today has been extremely stressful.

I have two tests tomorrow, two assignments due, and a lab report due. Luckily I finished the assignments and the lab report, but I haven’t even started studying, and it’s almost 9:00pm.

I’ve pretty much been at my desk working since I got home. I didn’t try to put this stuff off until the last minute, but between Saturday class, going to dinner, and the 12 miler, I am pooped and running out of time.

Mentally and physically I am beyond drained. I started crying multiple times today at dumb stuff, like not being able to figure out how to do something simple in AutoCad. I even told Jason I have no idea why I want to be in engineering school and started talking about dropping out or changing my major to basket weaving or something. Totally unlike me. Obviously, I am stressed out!

I seriously feel bad for venting!! Thanks for sticking around… I should be my normal happy self tomorrow when all this school junk is over.

 

To make this quick, here’s what today’s eats looked like:

Lunch

Saturday School

I’m not even sure if I’m awake right now…

Today went a little something like this:

5:30am: Alarm goes off, roll of the bed, Jason yells at me to stop hitting snooze.

5:45am-6:30am: Gym: Run 2 miles while being scared to death by Lady Gaga’s Paparazzi music video… I think I might have nightmares after watching that?! Do a few arm weight machines, and abs.

6:30-6:50am: Shower (didn’t have time to wash my hair, eeeeew), change, pack my breakfast/lunch/snacks

6:50am- Drive my semi-awake self to campus, and eat my Kashi Hot cereal. I would call this oatmeal… but it’s just not the same. I added a banana and some strawberries, and it tasted good, but it’s not oatmeal.

7:25am-7:30am: Hustle to the other side of campus. Game day parking requires me to park way out of the way!!

7:30am-12:00pm: First half of class. By the way, I’m taking this Saturday class as a refresher course before the FE. The FE is in 5 weeks… gaah!!! It’s not mandatory, but it’s really dumb if you don’t take it. Obviously.

10:30am: Snack #1, crunchy/obnoxious apple! 😀

12:00pm-1:00pm: Lunch break! Highlight of my day!… now if only we had nap time and recess. Hmm…

I packed leftovers from Thursday, which you didn’t see because I took the night off blogging. Here’s the pretty version (from Thursday). Mine was in a sweet little tupperware, and I ate it cold. Tasted good actually!

I honestly contemplated going straight home and putting PJ’s on. I am SO tired (and was so tired) from class all day. I’m glad I went out tonight! Life is too short to work hard and be boring!
