10k Trial Run

I had the best training run ever!

I’m signed up for a 10k Turkey Trot on Thanksgiving day (a week from tomorrow!) and I really wanted to see where I was speed-wise. Yesterday’s 4.0 miler was not too bad, but it wasn’t easy either.

This morning, I decided that I would let my BODY do its thing, and not let my mind get in the way.

I pounded out 6.2 miles (10k) to get a base time for next week. My legs felt SO fresh and ready to run fast!

I was so afraid that after such a big break (for me) I would have trouble getting back in. I realized that 90% of it was mental, only 10% physical. Everything felt the same, except for my mindset.

 

I finished my run in a total of 51:27!!! It rocked! I was smiling from ear to ear. 😀

Before I left, I grabbed a hunk of CLIF bar on the way out.

 

When I got back, I took care of the toes… and got to making breakfast.

Lunch

For lunch I really needed to use up an eggplant that’s been here since last weekend’s trip to the farmer’s market.

First, I sprinkled the pieces with a bit of balsamic vinegar, then sprinkled salt, pepper, garlic, and thyme on them. I grilled the slices on my George Foreman for a few minutes on each side.

Along with it, I had some spaghetti, with fire roasted sauce. I know its boring, but I really like spaghetti!!!

I need to get to work on packing.

I leave for New Jersey at 6:00 am!!! I can’t wait to see my BFF Debbie!! 😀

Busy and Unmotivated

I’ve been a busy bee since I last posted!

Yesterday afternoon, my sister and I worked on our Halloween costumes. It took up a good chunk of the afternoon, and before I knew it, it was time for class!

I struggled to come up with something to eat, since it was about 3:30 when I had to make dinner. I made a bunch of pasta so that Brielle and JasoNerd would have plenty when they were ready to eat (I have to eat at school since I have class from 4:30-10:30).

My pasta included:

  • Penne pasta
  • white beans
  • broccoli (steamed)
  • marinara sauce
  • parmesan cheese

I have to eat my dinners cold, which is getting so old! I also have to break it into two parts, since I have two ten minute breaks. I can’t wait to be on a normal schedule again!

By the time I got home, it was almost 11:00 and I was wiped! I knew that I had a 6.0 mile run on the marathon training plan and I was feeling VERY unmotivated to set the alarm and wake up to run. I immediately texted Caitlin to see if she would run with me!

I met at her apartment, and we ran a total of 6.0 miles. We took a few walking breaks, but still managed to run in just over an hour.

 

When I am feeling unmotivated to get out and run, I’ve found that it helps to:

  • Run with a friend– This is especially great if you have a lot to chat about!
  • Change the scenery- I like to run somewhere different than usual.
  • Download new music onto your ipod, listening to the same stuff tends to get boring
  • Think about the run in smaller chunks– Today I thought about running two 3.0 mile runs, out and back. It made the time pass faster.

 

What are your tricks for motivating yourself, when you just don’t feel like exercising?

Before I left, I fueled up with a piece of Almond Butter and Organic Jelly toast. Normally I wouldn’t need such a big snack, but I had not eaten anything since dinner, which was 14 hours prior!

By the time I got home, I was pretty hungry. I made a big yogurt bowl!

My bowl included:

  • container of Stonyfield Black Cherry yogurt
  • 1/2 cup granola
  • banana

YUM!!

 

I have a LOT to get done today!!! It’s already 11:00 am and I haven’t even showered. Must get on that.

Fundamentals of… What Exactly?

I do not feel ready for the FE tomorrow. It’s as simple as that.

I am really not comfortable with a LOT on this test. I’m going to try my best, and go in with a positive attitude! Each exam lasts four hours, for a total length of 8 hours of testing!!

If I don’t pass, I still can try again in April. I am probably making a bigger deal out of this than it actually is, but I just want to get it over with. Plus its $$$$$. It’s possible to pass, but I’m not expecting it. I’ll just guess “C” when I don’t know the answer. LOL.

 

I tried to study a bit more today, but I decided that it was just better to relax. I’ve been studying for four and a half years for this test. I get worked up about it really easily, so I’m chilling out. I made a nice pasta lunch today to keep me out of the office:

I used whole grain penne pasta, broccoli, peas, white beans, pesto, and this little guy:

It was quite a filling lunch!!

However, 15 miles requires extra food.

For my second lunch, I made an entire large sweet potato worth of fries! I don’t mess around with the ketchup! LOL.

After e-mailing with another engineer and friend (we met at the blogger lunch), I realized that I needed to stop thinking about the test, calm down, and relax tonight. Thanks, Gloria!  I had a Sam Adams Octoberfest to take the edge off. 😀

We did the easiest possible thing ever for dinner. I picked up a rotisserie chicken from Publix, whipped up a Caeser salad (with only a smidge of dressing), and mac n’ cheese.

I went back for more salad, and more pasta. Not really hungry but it tasted good.

Delicious, yes. Nutritious? Well… It’s not too bad. I just haven’t felt much like cooking the past week. I can’t wait to get this test over with!!!

34 Hours to Go…

I realize that I don’t always have the most interesting and creative food. I wish that I had time to make extravagant meals three times a day, but I don’t. It’s just not practical, nor do I really think it’s necessary. My life is really busy!

My goal with this blog is not to land some fancy extravagant chef job, but to show people that it IS possible to live healthfully even with a million other things going on.

I know that I have my days that are more stressful and less healthy than other days. However, taking care of myself, eating well, and living a full happy life (and showing others they can do the same) is very important to me! I hope that this message is portrayed, because that is my true passion.

I actually took a break for lunch today! I couldn’t really figure out what I wanted, but ended up deciding on a pizza bagel!

I used an everything bagel as the crust, topped with marinara sauce, and mozzerella cheese. I toasted it in the oven at 375 degrees F for 7 minutes.

Along with it, I had a spinach salad with tomato and carrot. Gotta get those veggies in!

I almost didn’t take a break for a snack. I was really craving chocolate chip cookies, but definitely did not have time to make any in the middle of the day! I settled for a Cookies ‘n Cream LUNA bar. It tasted good, but I still want cookies. 😀

Jason saw me studying for the FE hard-core when he came home. He offered to make me dinner before I left for class. I NEVER turn an offer like that down.

He made salmon with lemon pepper seasoning, steamed broccoli, and some sort of white mac n’ cheese. It was standard, but I’m not going to complain!

It’s so helpful to have Jason cook every now and then. He’s no expert, but learning for sure! Thank you!

I realize I mention the FE exam every single post. It’s seriously the only thing on my mind. After Saturday, I promise I will shut up about it.

Random Act of Kindness

Today, I was taken aback by the kindness of a fellow blogger, Julie. She is also an engineering student about to graduate in May. Even though we have never met, I know that we would be instant friends! Julie was SO thoughtful and sent me a gift certificate to MixMyGranola with encouraging words about this weekend’s test. It seriously made my entire week. 😀 Thank you!!

Sometimes I feel so alone being a “nerd” engineer. The past week or so it seems like more and more engineers out there have been giving me encouraging words on the blog. I love it!!

Lunch Date and Quick Dinner

Hello!

I hope everyone is having a great Tuesday! Every since my run this morning, I’ve been in a good mood! 😀

I’m enjoying my happiness while I finish this post, and then it’s back to studying. I have yet ANOTHER test tomorrow. My life feels like a super long exam!!

 

Lunch

Since Jason’s on the night shift this month, that means he is home during the day with me! Our two year dating anniversary is tomorrow, but since we have other plans/work/classes, we celebrated with a lunch date today!

We used to have lunch together (not always out) every single day before we even started dating. It is a tradition that I miss!

We headed to Nona Sushi, a local Japanese restaurant. I ordered the lunch special, a bento box with hibachi shrimp.

It came with a ginger side salad, which they always put WAY to much dressing on.

I asked for no butter on the shrimp and veggies, and the guy said he couldn’t do it. Umm… I was really confused, and I told him to please use minimal butter. He laughed at me.  Ugh, it was still buttery but it was DELICIOUS! I ate all the veggies, and half of the shrimp.

It also came with a blob of white rice which I’m not a fan of and had no problem leaving it there.

I love love love sushi! I was happy to eat all of these little California rolls. 😀

As good as the outside might taste, it is NOT HEALTHY! I compromised by picking 3/4 of it off, and I still got a bit of the flavor.

It was a great lunch, and I left feeling super full!!

 

I didn’t really need any snacks this afternoon, but I made a green smoothie before I left for class, since dinner was still 4-5 hours away.

My smoothie had:

  • spinach
  • ice
  • 1 banana
  • 1 TBL peanut butter
  • 1/2 cup vanilla soy milk

Jason saw me making it, and wanted half. Being an awesome girlfriend, I gave him half. It was actually just enough to hold me.

 

Dinner

Once I got home from class, I made a quick pasta salad for dinner.

It included:

  • penne pasta (carbs)
  • white beans (protein)
  • peas (veggies)
  • red pepper (veggies)
  • pesto (fats)

I boiled some penne pasta, while I prepared all the other stuff. The entire dish made 11 minutes to make, had only 5 ingredients, and covered all the well-rounded meal basics. Quick meals are a necessity in my life!

YUM!!

I contemplated cereal for dinner, but I’m so glad I took 10 extra minutes to make something more satisfying.

***Edited to Add: Just a had a little bowl of Moose tracks frozen yogurt!***

Just A Big Kid

Sometimes, I wish I could go back to Kindergarten!

Remember nap time, recess, fun snacks, and no tests? That’s the life right there…oh and it sort of describes my afternoon!

I ate a big girl lunch of leftover chili with Kashi crackers. This chili recipe is so amazing. I’m usually not a huge fan of random combos, but this might have changed my whole outlook. No joke.

Later, I snacked on a pear while I studied for Environmental process design…(aka poop sanitation class).

I then proceeded to doze off at my desk for approx 2.5 hours. I accidently slept through my 6:00 class, and woke up around 6:30 pm. OOPS!!! 

Nap time! It’s funny how in Kindergarten I HATED nap time, but now I desperately wish I had it!! Oh the Irony.

After nap time, I made some ants on a log- celery, PB, and raisins. I wanted to keep with my elementary school theme.

Why don’t I make this more often? It’s actually quite yummy!

 

Oh, did I mention that I also rocked my youth choir t-shirt from 3rd grade today? It’s the softest most comfy thing ever. I love it!

 

For dinner, I wanted to use up the eggplant I bought the other day at the farmer’s market. I was REALLY craving carbs, and I was pretty hungry this afternoon so I went with pasta!

I cubed half an eggplant, and sauted it in a pan with a drizzle of EVOO  and minced garlic. I then added in a can of organic diced tomatoes. Meanwhile, Jason made some whole wheat thin spaghetti and grilled chicken on the George Foreman grill.

We made some extras to eat for leftovers this week! The meal combo turned out quite tasty!

Jason isn’t an eggplant fan, so he left that out of his, and used cheese instead. LOL. Typical Jason.

Even though I napped today, I’m still pretty tired. I think I need more than 6.5  hours of sleep at night, especially with all the running I do!  Maybe I will add snack breaks as well as nap and recess into my daily routine.

It’s been a good day.

 

What do you miss most about being a kid? I miss playing outside with the neighborhood kids, making obstacle courses, riding bikes, and going to dance class.
