Just A Big Kid

Sometimes, I wish I could go back to Kindergarten!

Remember nap time, recess, fun snacks, and no tests? That’s the life right there…oh and it sort of describes my afternoon!

I ate a big girl lunch of leftover chili with Kashi crackers. This chili recipe is so amazing. I’m usually not a huge fan of random combos, but this might have changed my whole outlook. No joke.

Later, I snacked on a pear while I studied for Environmental process design…(aka poop sanitation class).

I then proceeded to doze off at my desk for approx 2.5 hours. I accidently slept through my 6:00 class, and woke up around 6:30 pm. OOPS!!! 

Nap time! It’s funny how in Kindergarten I HATED nap time, but now I desperately wish I had it!! Oh the Irony.

After nap time, I made some ants on a log- celery, PB, and raisins. I wanted to keep with my elementary school theme.

Why don’t I make this more often? It’s actually quite yummy!

 

Oh, did I mention that I also rocked my youth choir t-shirt from 3rd grade today? It’s the softest most comfy thing ever. I love it!

 

For dinner, I wanted to use up the eggplant I bought the other day at the farmer’s market. I was REALLY craving carbs, and I was pretty hungry this afternoon so I went with pasta!

I cubed half an eggplant, and sauted it in a pan with a drizzle of EVOO  and minced garlic. I then added in a can of organic diced tomatoes. Meanwhile, Jason made some whole wheat thin spaghetti and grilled chicken on the George Foreman grill.

We made some extras to eat for leftovers this week! The meal combo turned out quite tasty!

Jason isn’t an eggplant fan, so he left that out of his, and used cheese instead. LOL. Typical Jason.

Even though I napped today, I’m still pretty tired. I think I need more than 6.5  hours of sleep at night, especially with all the running I do!  Maybe I will add snack breaks as well as nap and recess into my daily routine.

It’s been a good day.

 

What do you miss most about being a kid? I miss playing outside with the neighborhood kids, making obstacle courses, riding bikes, and going to dance class.

Second Thoughts

I still have yet to sign up officially for the Disney Marathon.

Partially because I can’t bear the thought of slapping $125 on my credit card and letting it accumulate interest until I get a job next May, but mainly because I’m pretty scared. Twenty six point two miles is a long way.

 

Am I crazy? 26.2 miles!?!

 

I feel like I barely have time to breathe and get my homework done, much less train for a marathon. I’ve been talking to BFF Debbie about this a lot, especially with her moving to NJ next Monday. My BFF/Running pal is leaving!? 😦

Debbie advised that we both go ahead and sign up, and continue to train. She reminded me why I originally wanted to do this marathon- To prove to myself that I am capable of anything I put my mind too. Granted I am busy now, but my time is flexible. After this year, I’ll most likely be working for an engineering firm (I hope!) and not have as much time to dedicated to longer-mid week runs.

I just wanted to be real, and share that I’m honestly scared.

I think that my body is capable of 26.2 miles, but I’m not sure that I can wrap my head around the idea. My plan is to sign up, keep training, and give it my best. When you really want something, you make time for it!

This morning Debbie and I headed to one of our favorite running spots! We have a bunch of fun runs planned for her last week in O-town!

Before I left, I fueled up with half a full size bagel and PB. I’m trying to get my stomach accustomed to eating more than 1/4 or 1/2 a CLIF bar before runs. I don’t think that’s enough fuel!

We had a GREAT workout! I’m glad I gave my legs a two day break. They needed it! Our workout included:

  • 6.0 miles easy pace (10:00 min/mile average)
  • 2 laps on track, sprinting straightaways (5:34-6:17 pace!!!) and then jogging the curves
  • 2 laps cool down

Total= 7.0 miles!

When I got home, I made a big bowl of Boston Creme pie Oats!

  • 1/2 cup Oats
  • 1/2 cup vanilla soy milk
  • 1/2 cup water
  • 1 TBL Flax
  • graham cracker
  • banana
  • mini chocolate chips
  • dollop of plain yogurt

It’s official: Let the Marathon Training Begin!

No Expectations

Tomorrow is the big day! Well, just a 15k (9.3) race. Who am I kidding, that is awesome!

I have never raced this distance before, and I’m really excited! I honestly have NO idea how I will do, but no matter my speed, I’m automatically going to PR! I am thinking of pacing like I was in a half marathon, just finishing 4 miles early. 😀

I have no expectations for tomorrow other than to try my best and have fun! I put way too much pressure on myself during the Rock N’ Run 5k two weeks ago, and I didn’t enjoy that race as much as I normally would have. I finished and said, “meh, 24:23”… when honestly that is a great time for me! I think it’s important at this to remember why I am there, to have fun!!

 

My body was begging for extra sleep, so I stayed in bed until 8:00am. That might not sound late, but I am used to waking up at 5:00-6:00 every single day including weekends, so I greatly appreciated the extra rest!

I finally got up and moving and made some breakfast. Purple Peanut butter oats!

In the bowl:

  • 1/2 cup Oats
  • 1/2 cup water
  • 1/2 cup vanilla soy milk (so good!)
  • 1 TBL peanut butter
  • thawed out berries

I’m trying to focus on including a little carbs/protein/fat in each meal. I think this does a good job!

Have you ever run a 15k? That distance seems so odd to me. I once ran an 8k… even weirder!

 

In Other News….

Jason’s camera battery died, so I guess I’ll be back to using my 4.0 mega pixel brick 6 year old junk camera until he finds the charger!!! Good-bye beautiful food photos… see you soon! ***cough, Jason find the battery!!, cough***

Brown Bag Breakfast

It feels like a Sunday on a Thursday!

I met Debbie this morning for our last run before Saturday’s 15k race. We headed to one of our favorite spots, and ran an easy 4.0 miles.

Debbie has the day off work, so we stayed at the park and ate a brown bag breakfast! We contemplating going to Panera or FirstWatch, but decided that bringing food from home is so much cheaper!

I packed a Peanut butter and Jelly sammie + a banana:

I have to use the chunky jelly (preserves I guess?)… none of that low-sugar crap. Straight up gobs of organic fruit. MMMM.

I was slightly jealous of Debs’ breakfast:

I ordered the tall Vanilla Roobios Tea latte with nonfat milk, Debbie had an Awake Tea Latte! Both delicious!

Lunch

By the time lunch rolled around, I was really craving veggies! I knew that a big salad would do the trick.

I seriously threw in every bit of produce we had!

I topped it all with Asian Dressing

I have a hard time coming up with portable breakfasts! Must be why I resort to PBJ and clif bars for on-the-go!
