Allergic to Green?

Lunch today rocked.

I ate leftover Mellow Mushroom pizza!!  I cut the slices in half again so it was easier to eat, and also felt like I was eating more.

I contemplated having a salad on the side, but decided I didn’t really want it. I had plenty of veggies as toppings!!

It has:

  • bell pepper
  • broccoli
  • tomato
  • black olives
  • artichoke
  • tofu

My sister and I got a major chocolate chip cookie craving this afternoon. I think the ONLY thing we have in common besides our last name and parents is our dear affection for the classic Tollhouse cookie.

We made the full recipe (5 dozen cookies) but froze half the dough for future use. We used white and regular chocolate chips for something slightly different.

I’m a little embarrassed to admit how many I ate…

…but I think it was about 3 + a lick of dough! 😀

 

Dinner

Jason brought home stir-fry ingredients for dinner!

I was supposed to go to class at 6:00, but the idea of a warm dinner instead of something rushed and cold sounded AWESOME! I skipped and only went to my 7:30… oops!

Jason did most of the cooking. He cooked chicken and shrimp, and I just chopped the veggies:

  • carrot
  • bell pepper
  • broccoli
  • snap peas
  • bean sprouts

We had thai peanut noodles on the side (x 2… I was hungry tonight!)

I’m surprised that even Brielle liked it!!

My sister told me tonight that she is allergic to green food. Her plate looks SO different than mine:

Her plate looks so boring!! I wanted to sneak a pea on there or something.

Some people think we look alike, but we are complete opposites.

It’s weird though, we are like two peas in a pod… oh wait, she might not like that example since she hates peas. Hmph. I LOVE THEM!

Off to watch TV!

Lunch Date and Quick Dinner

Hello!

I hope everyone is having a great Tuesday! Every since my run this morning, I’ve been in a good mood! 😀

I’m enjoying my happiness while I finish this post, and then it’s back to studying. I have yet ANOTHER test tomorrow. My life feels like a super long exam!!

 

Lunch

Since Jason’s on the night shift this month, that means he is home during the day with me! Our two year dating anniversary is tomorrow, but since we have other plans/work/classes, we celebrated with a lunch date today!

We used to have lunch together (not always out) every single day before we even started dating. It is a tradition that I miss!

We headed to Nona Sushi, a local Japanese restaurant. I ordered the lunch special, a bento box with hibachi shrimp.

It came with a ginger side salad, which they always put WAY to much dressing on.

I asked for no butter on the shrimp and veggies, and the guy said he couldn’t do it. Umm… I was really confused, and I told him to please use minimal butter. He laughed at me.  Ugh, it was still buttery but it was DELICIOUS! I ate all the veggies, and half of the shrimp.

It also came with a blob of white rice which I’m not a fan of and had no problem leaving it there.

I love love love sushi! I was happy to eat all of these little California rolls. 😀

As good as the outside might taste, it is NOT HEALTHY! I compromised by picking 3/4 of it off, and I still got a bit of the flavor.

It was a great lunch, and I left feeling super full!!

 

I didn’t really need any snacks this afternoon, but I made a green smoothie before I left for class, since dinner was still 4-5 hours away.

My smoothie had:

  • spinach
  • ice
  • 1 banana
  • 1 TBL peanut butter
  • 1/2 cup vanilla soy milk

Jason saw me making it, and wanted half. Being an awesome girlfriend, I gave him half. It was actually just enough to hold me.

 

Dinner

Once I got home from class, I made a quick pasta salad for dinner.

It included:

  • penne pasta (carbs)
  • white beans (protein)
  • peas (veggies)
  • red pepper (veggies)
  • pesto (fats)

I boiled some penne pasta, while I prepared all the other stuff. The entire dish made 11 minutes to make, had only 5 ingredients, and covered all the well-rounded meal basics. Quick meals are a necessity in my life!

YUM!!

I contemplated cereal for dinner, but I’m so glad I took 10 extra minutes to make something more satisfying.

***Edited to Add: Just a had a little bowl of Moose tracks frozen yogurt!***

Brown Bag Breakfast

It feels like a Sunday on a Thursday!

I met Debbie this morning for our last run before Saturday’s 15k race. We headed to one of our favorite spots, and ran an easy 4.0 miles.

Debbie has the day off work, so we stayed at the park and ate a brown bag breakfast! We contemplating going to Panera or FirstWatch, but decided that bringing food from home is so much cheaper!

I packed a Peanut butter and Jelly sammie + a banana:

I have to use the chunky jelly (preserves I guess?)… none of that low-sugar crap. Straight up gobs of organic fruit. MMMM.

I was slightly jealous of Debs’ breakfast:

We stopped at Starbucks on the way to pick up our race packets at Track Shack:

I ordered the tall Vanilla Roobios Tea latte with nonfat milk, Debbie had an Awake Tea Latte! Both delicious!

Lunch

By the time lunch rolled around, I was really craving veggies! I knew that a big salad would do the trick.

I seriously threw in every bit of produce we had!

  • and 5 shrimp!

I topped it all with Asian Dressing

… it really makes the salad taste great.

I have a hard time coming up with portable breakfasts! Must be why I resort to PBJ and clif bars for on-the-go!
