Forced Eating Schedule

I feel like lately my eating schedule has been well… all over the place!

I got hungry for lunch at 11:00 am. I decided to make something that would take a bit of time so I would be forced to wait until a more normal (for me) lunch hour. I had half a block of leftover tofu to use up, and a bell pepper on its last leg.

I created: Tofu stuffed bell pepper!

  • Half a block of tofu (only used half of what I cooked)
  • steamed spinach
  • cheddar cheese
  • leftover israeli couscous
  • red bell pepper

I cooked the tofu, mixed with the other ingredients, stuffed it all in the pepper, and baked for 20 minutes.

Only about half of the mixture fit inside the pepper, so I ate the rest of it while the pepper baked.

I had a container of Vanilla Oikos, 1/2 cup Kashi H2H, pom arils, and blueberries. YUM!! It held me for about four hours, until dinner part two:

 

I got home from class at around 9:30 pm.Luckily, I planned ahead and thawed out some butternut squash soup.

I didn’t think that sounded filling enough, so I heated up the leftover tofu to go along with it. (I ate half a block of tofu in one day…)

I don’t really like having to split my meals up like this for a few reasons:

1. I don’t feel like eating something large at 4:30 pm when I leave.

2. I feel like I eat way more because I get home and I’m STARVING!

 

No matter what I try, I seem to always leave for class feeling stuffed, and get home starving.

 

My Ideal Eating Schedule would be:

5am (or before my runs)- Snack

8am (after run or when I wake up) Breakfast

11am: Snack

1 pm: Lunch

4pm: Snack (or more snacks if needed)

7pm: Dinner

 

However, life is not ideal. I eat when I have time!! Right now my schedule forces me to eat a LARGE snack to hold me over at around 4:30 pm, and then I can eat again at 10-11pm.

 

 

Do you tend to eat whenever you feel like it, or does your job/schedule force you to eat at random times?

Homemade Butternut Squash Soup

I actually got off the couch today, and made some Homemade soup!

I know I’ve said this before, but homemade soup (or any soup really) is my comfort food.

I’ve been wanting to use my butternut squash for a while now, and BFF Debbie sent me her recipe for butternut squash soup!

First, I cut a butternut squash in half, placed it in a glass casserole dish filled with 1/2 an inch or so of water, and let it cook for 30 minutes on 425 F.

Meanwhile, I sauted in a large pot:

  • 1/2 TBL smart balance butter
  • 1 carrot
  • 1/2 yellow onion

Once the squash was done, I added the rest of the ingredients, and let it simmer.

  • cubed squash (the whole thing)
  • diced tomato
  • salt
  • pepper
  • 3 cups veggie broth

I then took about 2 cups of the mixture out of the pot and placed it into my blender. Instead of putting the entire lid on it, I took the center out of the top, covered it with a paper towel  so that the hot air would have a way to escape.

Once the mixture was blended, I added it back into the main pot.

I then added an entire can of rinsed kidney beans, and half a bag of spinach. I let it simmer until the spinach wilted.

My soup was then ready to eat! I used the other half of my acorn squash (it was about to go bad…) as my soup bowl.

On the side, I had a piece of toast with butter.

It was delicious, and even better in the edible bowl! 😀

I bagged up the leftovers in individual servings for quick meals.

I LOVE SOUP!

When Jason brought home my antibiotics, and more gauze, he also brought home cookie making stuff! He knew that cookies would cheer me up! He even made them for me!

This is a plate of lies… I actually ate three!

They are so good. Little mini PB cups and chocolate chunks of heaven. I think it was store bought dough… oh well, its the thought that counts! I appreciate my man thinking of me!

Camera news…

Jason finally got his camera fixed! Hooray for awesome food photos again!

Toe news…

My toes are looking good! I had to replace the bandages today, and they are healing nicely. However, I think I’m allergic to the antibiotics they prescribed to me. Ten minutes after taking them, my palms and soles of my feet felt on fire! It was like EXTREME itching, which then spread up my arms and legs. Jason called the doctor, who said to stop taking the medication immediately! Hypersensitivity is apparently a bad side effect. 😦

 

I’m off to spend time with my man! He’s been awesome and taking care of me through this whole thing. I love him so much!

Meals on the Go

I had to say goodbye to my little sister this afternoon. 😦

 

Before we left for the airport, I made a Mexican themed lunch:

I had a cup of black bean soup

…and a salad.

My salad included:

  • romaine lettuce
  • green bell pepper
  • crumbled chips
  • Grilled chicken breast
  • cheese
  • salsa

On the way to test number two of the day, I ate a CLIF bar mini in the car. I almost brought a Pumpkin pie Kashi bar, but I have missed the Brownie! Jason always steals them, but this one was buried in the bar stash! 😀

I also stopped at D and D for some Latte love! 99 cents, can’t beat it!

I packed my dinner in a little Fresh n’ Fit container that I have actually had for a while, but never use. It comes with an ice pack, and individual compartments for snacks. In case anyone is wondering, I found it at Target.

In the main compartment I packed a turkey and cheese sandwich. The ice pack fits over the sandwich area, and rests on little “shelves” so it doesn’t squish the sandwich.

I filled the top two containers with fruits and veggies: one with carrots and peas, and one with strawberries.

Each of those fits into the groves on the ice pack…

…and closes with the lid!

It kept my food cold (for 6 hours) without having to pack the whole bulky lunch cooler! I really liked using it!

16 Hours on Campus

Whew!!!

Today has been one LONG day! I got a ton of stuff accomplished though, which made me feel good! My test seemed to go okay, better than the others have been lately!

Best part of the day… a field trip!

At 3:00 pm, I met the rest of my classmates and my concrete design teacher at the construction site.

We didn’t have to travel far. In fact, I walked to the site! UCF is building a performance arts building and it was just on the other end of campus.

I’m glad that I kept my hardhat and steel toed boots around from my internship! They were required to go on site!

I didn’t take a picture of myself… but this is the exact same thing, minus the bridge (from last year). I look so hott right? LOL.

BAHAHA.

The site was cool! We saw all the “underneath” stuff (rebar, etc) before the concrete slabs go in. I’ve seen this stuff a thousand times, but it is always different. I got to see post-tension cables… I don’t think anyone actually knows what that is, but I was intrigued.

I forgot how much walking site visits required! I climbed up the 19 foot wooden ladder a few times, and it was scary!!!

Unfortunately, I wasn’t able to take my camera out because of the site rules. It ended up working out because it started to POUR!!

My clothes got soaking wet, and my jeans were all muddy at the bottoms. Luckily, I had a change of shirt, but not pants. I had to sit through my classes feeling so gross!!

In between the site visit and classes, I stopped at smoothie king on campus to pick up a smoothie. It hit the spot after being outside for 2.5 hours. (I missed my first class…oops!!)

Mmmm… Angel Food! I always ask for no extra sugar, because it saves like 100 calories, and tastes much more natural. I like tasting actual fruit, not just sugar!

I am so glad that I took the time to pack food for the day. It saved me time, and every time I got hungry I just pulled something out of my lunch cooler. A few people said they wouldn’t be satisfied with a bunch of snacks, but I was so busy I didn’t really have time to notice. Eating frequently seemed to keep my energy levels steady, and it was a great excuse to take a break ever 2 hours or so!

I sort of forgot that drinking my 6:00pm smoothie, and eating dinner at 11:00pm would leave me hungry in class. My stomach literally growled so loud that my teacher stopped lecturing to ask me if I was okay! Gaaaah!?!! How embarrassing!!!! I had been hunched over because I was freezing and starving (see Muddy clothes) and so I probably looked miserable.

We were let out late tonight from my design class, putting me on campus for 16 straight hours! I think it’s a record! (Other than living in the dorms.)

 

Once I finally got home, I quickly showered and heated up my leftover homemade  Minestrone soup. It was PERFECT!!

Well, I used up 16 hours of my day at school… I intend to use the next 7 to 8 in my cozy bed! Jason’s working the night shift, so I get to sleep dead center.

 

What is the longest amount of time you have ever been on campus, or at work?

My records: Campus (16 hours- today!), Work (19 hours- overnight for a concrete pour!)

Not Goodbye, See You Later

I just said “see you later” to my BFF Debbie. As I’ve been saying, Debbie is leaving tomorrow for NJ and I’m really sad. 😦

I’ve actually known for quite some time but didn’t say anything about it on the blog until a week or so ago, so I’ve had time to “prepare”. LOL.

I’m not going to lie, growing up is hard!

 

Today should have been spent studying for tomorrow morning’s hydrology test, but I couldn’t bring myself to study. I spent all of last week studying, and it got me nowhere. I’m rebelling.

I made a quick lunch before heading out for some errands. Quesadilla with grilled zucchini, leftover chicken, and cheddar cheese.

I ate the zucchini that wouldn’t fit into the quesadilla on the side. Grilled zucchini is so delicious!

During errands, I met up with Meghann. We stopped at Starbucks for some refreshments. It’s flippin’ hot outside!

I had an iced nonfat latte with 2 pumps vanilla. Oh so yummy!

Meghann was generous and shared a pumpkin spice Hershey’s  kiss.

I expected chocolate with pumpkin inside, but it was orange pumpkin goodness!

Tonight I was on my own for dinner, which basically means I can have whatever I want! I secretely love these nights!

I tried to recreate the Publix Tuscan Minestrone soup that I had a few weeks ago. It came out different but amazing!

I started with these two soups, veggie broth and roasted red pepper and tomato:

I added some roasted veggies:

  • broccoli
  • onion
  • carrot
  • mushroom
  • peas
  • celery

I boiled some macaroni pasta and spinach… and added in some white beans and thyme. I let it all simmer for 20 minutes or so…

I’m happy to say that I have leftovers! Soup is my comfort food.

My test is in 8 hours… I haven’t studied!?!

It’s so hard to focus my mind on school when I feel like there are one billion other things going on!

 

I’m really sorry to be so “negative nancy” lately. My life hasn’t exactly been very rainbows and sunshine lately. Things have to start looking up soon!!
