Very Productive Wednesday

I love it when I finish the day knowing I got everything accomplished that I needed to. Isn’t that the best feeling?

My sister and I started our errands pretty early this morning. We stopped at Dunkin donuts for some coffee. I forgot my camera, so I had to use hers. Her memory card isn’t compatible with my computer, so I had to take pictures of the camera. Sorry for the HORRIBLE quality!!

IMG_1289

I discovered that small lattes (I ordered a nonfat, one pump vanilla) are only 99 cents at DD. I traded my one dollar bill for this amazing little drink. They taste better than Starbucks!! YUMM!

I asked the lady how the pumpkin munchkins tasted, and she generously let me try one for free! Two points for DD!!

IMG_1290

Again, sorry for the photo.

After errands, it was time for school. I spent my entire afternoon in the lab working on my concrete design project.

IMG_1281

I feel bad for having to drag my sister to the lab for 5 hours, but she was a trooper!  She worked on a playlist for Saturday’s Halloween Party.

IMG_1276

My sister is such a ham.

IMG_1283

I packed my lunch along, plate and all!

IMG_1272

I made it in a rush this morning, so it was slightly boring.

IMG_1275

My lunch included:

  • Turkey and Cheese sandwich
  • Apple Slices
  • carrot
  • snap peas

No worries, there were more fruits and veggies eaten not pictured on the plate…

IMG_1274

…and around 4:00 pm an Endure Glo Bar. (Made by Angela, Given to me by Caitlin!)

IMG_1278

Once I got home it was almost 6:00 pm. I needed to get my run in, but felt a little hungry so I made a banana with Almond butter for a snack.

IMG_1286

I managed to get my run in, with the help of my sister!! She dragged my butt to the gym, and I managed to get in 4.0 miles in 35:45on the treadmill. It was fast, but felt easy!

This morning I was unsure about how running in the evening would be, and honestly I thought about skipping it. I’m so glad I did it.

IMG_1294

Dinner was delicious!

IMG_1295

I made a little bit of something for everyone:

My favorite part was the Salmon!!

IMG_1296

Plus, a chocolate chip cookie for dessert…they are so good.

IMG_1301

I need to continue this very productive day… I still have some things I need to get done!

Good-night!

Allergic to Green?

Lunch today rocked.

I ate leftover Mellow Mushroom pizza!!  I cut the slices in half again so it was easier to eat, and also felt like I was eating more.

IMG_1260

I contemplated having a salad on the side, but decided I didn’t really want it. I had plenty of veggies as toppings!!

It has:

  • bell pepper
  • broccoli
  • tomato
  • black olives
  • artichoke
  • tofu

My sister and I got a major chocolate chip cookie craving this afternoon. I think the ONLY thing we have in common besides our last name and parents is our dear affection for the classic Tollhouse cookie.

We made the full recipe (5 dozen cookies) but froze half the dough for future use. We used white and regular chocolate chips for something slightly different.

IMG_1261

I’m a little embarrassed to admit how many I ate…

IMG_1263

…but I think it was about 3 + a lick of dough! 😀

Dinner

Jason brought home stir-fry ingredients for dinner!

IMG_1264

I was supposed to go to class at 6:00, but the idea of a warm dinner instead of something rushed and cold sounded AWESOME! I skipped and only went to my 7:30… oops!

IMG_1267

Jason did most of the cooking. He cooked chicken and shrimp, and I just chopped the veggies:

  • carrot
  • bell pepper
  • broccoli
  • snap peas
  • bean sprouts

We had thai peanut noodles on the side (x 2… I was hungry tonight!)

IMG_1266

I’m surprised that even Brielle liked it!!

My sister told me tonight that she is allergic to green food. Her plate looks SO different than mine:

IMG_1268

Her plate looks so boring!! I wanted to sneak a pea on there or something.

Some people think we look alike, but we are complete opposites.

image

It’s weird though, we are like two peas in a pod… oh wait, she might not like that example since she hates peas. Hmph. I LOVE THEM!

Off to watch TV!

Teriyaki Tofu Triangles

That’s a tongue twister!

For lunch, I wanted to use up the other half block of tofu. I would end up throwing it away otherwise. I got a little creative, and cut them into cute little triangles!

IMG_0666

I marinated them in teriyaki sauce for 30 minutes while I studied, and then grilled them on the George Foreman grill.

Along with it, I had carrots, cauliflower, and broccoli with the same marinade. I sprinkled it all with sesame seeds!

IMG_0665

Yummy lunch!

Soon after, I wanted sugar! I busted out some cantaloupe…

IMG_0671

I wasn’t really hungry this afternoon, but with a 12.0 miler on the schedule tomorrow, I need to make sure I fuel up adequately. I munched on some pita chips, hummus, and more veggies:

IMG_0672

I packed a snack for my break between classes, which is at 7:15pm. I picked up this new (to me) flavor of Stonyfield yogurt, Super Fruits. I packed raspberries on the side to mix in!

IMG_0675

It was a great idea! This flavor was very fresh tasting, and the berries were a perfect addition!

IMG_0678

When I got home from class, I was distracted by this:

IMG_0683

Water from the ice pack used to pack the yogurt leaked out of my cooler and into my bag, getting ALL my school papers soaked!

IMG_0682

As much as I hated doing it, I saved that shiz.

While this was going on I tried to think of the fastest possible way to get food into my belly. A sandwich sounded awesome. The grill was still out from lunch, so I whipped up a panini!

IMG_0679

I think the fact that it was warm made it so much better!!! Oh, and the bread was free thanks to Foodbuzz! 😀

IMG_0681

It had:

  • 2 Slices Nature’s Pride Bread- 12 Grain
  • turkey slices
  • cheddar cheese
  • tomato
  • sprouts
  • mustard

I’m off to bed! Waking up at an Un-godly hour to run 12.0 miles!

Lunch Date and Quick Dinner

Hello!

I hope everyone is having a great Tuesday! Every since my run this morning, I’ve been in a good mood! 😀

I’m enjoying my happiness while I finish this post, and then it’s back to studying. I have yet ANOTHER test tomorrow. My life feels like a super long exam!!

Lunch

Since Jason’s on the night shift this month, that means he is home during the day with me! Our two year dating anniversary is tomorrow, but since we have other plans/work/classes, we celebrated with a lunch date today!

IMG_0619

We used to have lunch together (not always out) every single day before we even started dating. It is a tradition that I miss!

We headed to Nona Sushi, a local Japanese restaurant. I ordered the lunch special, a bento box with hibachi shrimp.

IMG_0610

It came with a ginger side salad, which they always put WAY to much dressing on.

IMG_0609

I asked for no butter on the shrimp and veggies, and the guy said he couldn’t do it. Umm… I was really confused, and I told him to please use minimal butter. He laughed at me.  Ugh, it was still buttery but it was DELICIOUS! I ate all the veggies, and half of the shrimp.

IMG_0611

It also came with a blob of white rice which I’m not a fan of and had no problem leaving it there.

IMG_0614

I love love love sushi! I was happy to eat all of these little California rolls. 😀

IMG_0612

…and lastly, tempura veggies- sweet potato and zucchini

IMG_0613

As good as the outside might taste, it is NOT HEALTHY! I compromised by picking 3/4 of it off, and I still got a bit of the flavor.

IMG_0616

It was a great lunch, and I left feeling super full!!

I didn’t really need any snacks this afternoon, but I made a green smoothie before I left for class, since dinner was still 4-5 hours away.

IMG_0620

My smoothie had:

  • spinach
  • ice
  • 1 banana
  • 1 TBL peanut butter
  • 1/2 cup vanilla soy milk

Jason saw me making it, and wanted half. Being an awesome girlfriend, I gave him half. It was actually just enough to hold me.

Dinner

Once I got home from class, I made a quick pasta salad for dinner.

IMG_0622

It included:

  • penne pasta (carbs)
  • white beans (protein)
  • peas (veggies)
  • red pepper (veggies)
  • pesto (fats)

IMG_0624

I boiled some penne pasta, while I prepared all the other stuff. The entire dish made 11 minutes to make, had only 5 ingredients, and covered all the well-rounded meal basics. Quick meals are a necessity in my life!

YUM!!

I contemplated cereal for dinner, but I’m so glad I took 10 extra minutes to make something more satisfying.

***Edited to Add: Just a had a little bowl of Moose tracks frozen yogurt!***

What’s the best meal you have made in under 15 minutes?

Streeeeeetch

That’s what I really wanted today. A good stretch!

My legs are still feeling tight from Saturday’s 15k! I know I pushed it hard, and being a little sore still just tells me that I pushed it to the limits.

I decided to take a 30 minute break from studying to hit the gym. Normally, I hate the elliptical, but I didn’t today. I just cruised along at the slowest pace ever for 20 minutes. It felt good to get the blood flowing in my legs, since I pretty much sit all day.

After my non-workout, I did this stretching routine from Runner’s World Magazine:

IMG_0340

It felt soo good!

Before I left, I ate another Honeycrisp Apple. Seriously, best fruit on the planet. I’m not even a huge apple fan and I LOVE these babies.

IMG_0337

Lunch and dinner are only 5 hours apart on Monday nights (I have to eat at 5:30 pm) so that was all I needed.

I warmed up some leftover Chicken and Sweet Potato Dumplings from the other night for dinner and added some peas:

IMG_0342

Still good, a couple days later!

IMG_0343

A few of you asked for the Chicken and Sweet potato dumplings recipe, but honestly we didn’t follow it exactly. For starters, we used chicken, not turkey. For veggies we used broccoli, carrot, onion, mushroom, kale, okra, and cauliflower. Other than that we pretty much followed the recipe, but had to add more chicken broth because we had so many veggies!

image

(I tried kale, okra, AND cauliflower! All things on my LIST!) 😀

Once I got home from class, I had  a small glass of vanilla soymilk…

image

and a handful of dark chocolate peanut m&m’s. I have been craving these little guys!

IMG_0344

I can’t wait to run in the morning! Two days off will do that to me. 😀

Running on Empty

Racing makes me tired!

As soon as I got home from the race, I made a giant glass of chocolate milk. My tummy felt weird, and I knew that I needed to get some protein and sugar in to start the recovery process.

IMG_0243

After I showered and got ready to leave for class, hunger hit me! I made a quick bowl of mac n’ peas!

IMG_0248

Did you know that one serving of peas adds 5 g of protein and 4g of fiber!? Way to bulk up the meal!

I STRUGGLED to stay awake in my FE Review class yesterday. The adrenaline rush faded and left me feeling like I had nothing left in me. My “gas tank” was on empty! (As was my car!)

IMG_0255

I packed plenty of fluids

 IMG_0249

..a honey crisp apple (eaten on break)…

IMG_0250

…and a CLIF bar (I ate the whole thing!)

IMG_0251

Jason and I were lazy and made Pizza for dinner!

Man pizza:

IMG_0256

MegaN- veggie pizza:

IMG_0257

Delicious!

IMG_0260

Plus, mini bowl of Moose Tracks frozen yogurt, eaten in bed while watching multiple episodes of Gossip Girl! 😉

IMG_0261

*****

I’m declaring today a Day of Rest! My legs deserve it! They pushed hard yesterday, and I’m pampering them today.

It felt SO good to wake up this morning and be able to relax! No long run to get ready for, no class to rush off to, nothing at all! Granted, I have much school work needing to be done, but it can be put off an hour to enjoy the early morning quiet.

I made a pot of coffee, and enjoyed a leisurely breakfast outside.

IMG_0268

I feel like lately breakfast has been SUPER rushed or even force fed (like before long runs and races). I got to eat whatever I wanted and however slow I wanted. It was beautiful!

IMG_0265

On the menu was flax French toast with banana….

IMG_0270

…and syrup for dipping! YUM!

IMG_0266

My goals for the day are:

  • Spend some time with Jason (He’s been neglected)
  • Study for at least 4 hours (two tests this week)
  • Farmer’s Market

I think I can do it!
