Cheater, Cheater, Pumpkin Eater

There are two more days until I can “officially” run. I was supposed to take two weeks completely off after my toe surgery.

It’s been 12 full days… and well…

image

I just couldn’t take it anymore! I cheated. I ran. It rocked.

image

That’s right, I ran!!!!!!! It was GLORIOUS!!

After the rough night I had , a run with a friend [Caitlin] was just what I needed to start the day off with a bang. 😀

We ran 4.0 miles in 39 minutes! I know that it’s not all that fast, but I was just thrilled to be running again. I was so unsure how it would feel to run again, or how my toes would hold up.

My legs felt fresh, my head was in the game, and I was ready to run!

It felt really awkward at first on my toes. I haven’t been putting much pressure on them, so it felt a odd to do so. They are looking pretty good, and I have my follow up appointment this afternoon. I hope the doctor agrees!

After I posted last night, Jason informed me I received a package in the mail. What? I got mail? Megan and Felicia from Bites of the Apple, were very generous in sending me a care package!

DSC_0109

I felt like a little kid on Christmas morning!!

It was so nice of these girls to send me stuff! Megan is training for the Disney Marathon as well, and I can’t wait to meet her! Felicia is training for her first race EVER, a half marathon in February!! Good stuff!

Thanks again, ladies! You made my night! 😉

The package had all kinds of delicious Trader Joe’s goodies

DSC_0113

…and marathon training supplies!!!

DSC_0114

Plus, Megan’s signature, Silly Putty! Which JasoNerd thought was for him… this picture makes me laugh… a lot.

He’s clearly 5 years old.

DSC_0111

Before I left for my run with Caitlin, I had a Kashi waffle with Pumpkin butter for a snack.

DSC_0123

YUM!

DSC_0126

…and when I returned, I had a cup of vanilla Oikos with Trader Joe’s Pumpkin spice granola.

DSC_0127

Heaven in a mug.

DSC_0129

I’m definitely noticing a pumpkin theme today…

I have big plans to organize this afternoon, and get a game plan for the next few weeks.

Have a great day!

Bundle of Nerves

This morning, I had to give an 8-minute presentation in my hydrology class. It could be on any topic related to water (quality/control), which meant I was free to choose pretty much anything.

I’m NOT a huge fan of public speaking, mostly because I have barely any practice. I sit at my computer or in front of textbooks calculating stuff all day.

I was SO nervous beforehand. Even though I practiced at LEAST 8 times last night, it was totally different. I was well prepared, and had no reason to be so terrified. My heart was like racing, and my stomach was filled with butterflies.

Once I got up to present, I took a deep breath, and dove right in. I felt really confident, and people seemed like they were actually paying attention! Hopefully  I did well. It was so nerve wracking!

In case you ever need to know anything about the Ancient Roman Aqueducts, feel free to ask. I feel like an expert.

image

I’ve got a lot going on right now. I was up until 2:00 am working on various school projects.

My Life = [To Do List + Homework] x 10^n

I had to wake up at 5:30am to make it to my class, so it was a coffee morning for me!  I’m sure you know how it goes.

DSC_0064

I ate a stabilizing breakfast before I left:

DSC_0063

  • Honey Oikos
  • 1/2 cup Kashi H2H
  • 1/2 cup Kash goLean
  • Strawberries

My tummy was growling by 10:00 am. Obviously it was way to early for lunch, so I had half a White Chocolate Macadamia Nut CLIF bar.

DSC_0074

My lunch is ready! Time to grab it out of the oven. See you tonight!

Are you good at public speaking? How do you shake the nervous feeling?

Forced Eating Schedule

I feel like lately my eating schedule has been well… all over the place!

I got hungry for lunch at 11:00 am. I decided to make something that would take a bit of time so I would be forced to wait until a more normal (for me) lunch hour. I had half a block of leftover tofu to use up, and a bell pepper on its last leg.

I created: Tofu stuffed bell pepper!

DSC_0241

  • Half a block of tofu (only used half of what I cooked)
  • steamed spinach
  • cheddar cheese
  • leftover israeli couscous
  • red bell pepper

I cooked the tofu, mixed with the other ingredients, stuffed it all in the pepper, and baked for 20 minutes.

Only about half of the mixture fit inside the pepper, so I ate the rest of it while the pepper baked.

DSC_0245

Delcious!

Snack #1: Two homemade cookies

DSC_0254

Snack #2: 1.5 honey crisp apples (there was a random half in my fridge I wanted to use up)

DSC_0247

On the way out the door, I had part one of dinner, which Jason photographed for me. HEHE…

DSC_0252

I had a container of Vanilla Oikos, 1/2 cup Kashi H2H, pom arils, and blueberries. YUM!! It held me for about four hours, until dinner part two:

I got home from class at around 9:30 pm.Luckily, I planned ahead and thawed out some butternut squash soup.

DSC_0258

I didn’t think that sounded filling enough, so I heated up the leftover tofu to go along with it. (I ate half a block of tofu in one day…)

DSC_0256

It was really filling!!

DSC_0255

I don’t really like having to split my meals up like this for a few reasons:

1. I don’t feel like eating something large at 4:30 pm when I leave.

2. I feel like I eat way more because I get home and I’m STARVING!

No matter what I try, I seem to always leave for class feeling stuffed, and get home starving.

My Ideal Eating Schedule would be:

5am (or before my runs)- Snack

8am (after run or when I wake up) Breakfast

11am: Snack

1 pm: Lunch

4pm: Snack (or more snacks if needed)

7pm: Dinner

However, life is not ideal. I eat when I have time!! Right now my schedule forces me to eat a LARGE snack to hold me over at around 4:30 pm, and then I can eat again at 10-11pm.

Do you tend to eat whenever you feel like it, or does your job/schedule force you to eat at random times?

Purple [Dino]Sore Toe

For the past week or more, I’ve been having problems with my left big toe. Every since Friday’s long run, my toe has been as purple as the shirt I wore on my run this morning:

IMG_1492

I think that my toenail is ingrown, and unfortunately now infected. It hurts A LOT when I run, and if I touch area around the nail. I’m heading to the doctor at 1:00pm to make sure that running isn’t going to cause gangrene or something, and possibly get it taken care of. I would hate for a stupid piece of nail to affect my marathon training!!

I decided to get in a good “last run” in case they have to surgically remove my toenail (which Jason had to have done, and was off his foot for two weeks!!) Gaaah!

I had a 7.0 miler on my marathon training plan, and there was no way I was letting it pass me by. I like to think I’m hardcore. 😉

Mile Stats:

  • Mile 1: 9:30 (warm-up)
  • Mile 2: 9:00
  • Mile 3: 8:47
  • Mile 4: 8:42
  • Mile 5: 8:46
  • Mile 6: 8:47
  • Mile 7: 8:36

Woo hoo! I finished with an average pace of 8:52 min/mile! If my toe falls off, I will die happy after that run. Ok… just kidding.

Breakfast

I was extremely hungry after my run, even though I had half a CLIF bar moments before I walked out the door.

Cereal and yogurt sounded refreshing, so that’s what I made!

IMG_1495

My bowl included:

  • small container vanilla Oikos yogurt
  • 1/2 cup Kashi go Lean
  • 1/2 cup Kashi heart to heart cereal
  • banana
  • 1 TBL flax

IMG_1496

YUM!

Ok, wish me luck!

I have another exam tonight, and the Doctor’s appointment. I am crossing my fingers that there is something they can do for my toe that won’t keep me from marathon training. I’m half way there!

Busy and Unmotivated

I’ve been a busy bee since I last posted!

Yesterday afternoon, my sister and I worked on our Halloween costumes. It took up a good chunk of the afternoon, and before I knew it, it was time for class!

I struggled to come up with something to eat, since it was about 3:30 when I had to make dinner. I made a bunch of pasta so that Brielle and JasoNerd would have plenty when they were ready to eat (I have to eat at school since I have class from 4:30-10:30).

 IMG_1255

My pasta included:

  • Penne pasta
  • white beans
  • broccoli (steamed)
  • marinara sauce
  • parmesan cheese

I have to eat my dinners cold, which is getting so old! I also have to break it into two parts, since I have two ten minute breaks. I can’t wait to be on a normal schedule again!

By the time I got home, it was almost 11:00 and I was wiped! I knew that I had a 6.0 mile run on the marathon training plan and I was feeling VERY unmotivated to set the alarm and wake up to run. I immediately texted Caitlin to see if she would run with me!

I met at her apartment, and we ran a total of 6.0 miles. We took a few walking breaks, but still managed to run in just over an hour.

When I am feeling unmotivated to get out and run, I’ve found that it helps to:

  • Run with a friend– This is especially great if you have a lot to chat about!
  • Change the scenery- I like to run somewhere different than usual.
  • Download new music onto your ipod, listening to the same stuff tends to get boring
  • Think about the run in smaller chunks– Today I thought about running two 3.0 mile runs, out and back. It made the time pass faster.

What are your tricks for motivating yourself, when you just don’t feel like exercising?

Before I left, I fueled up with a piece of Almond Butter and Organic Jelly toast. Normally I wouldn’t need such a big snack, but I had not eaten anything since dinner, which was 14 hours prior!

IMG_1256

By the time I got home, I was pretty hungry. I made a big yogurt bowl!

IMG_1257

My bowl included:

  • container of Stonyfield Black Cherry yogurt
  • 1/2 cup granola
  • banana

YUM!!

I have a LOT to get done today!!! It’s already 11:00 am and I haven’t even showered. Must get on that.

You Spin My Head Right Round…

This morning, my sister and I decided to do something new!

We took a spinning class at UCF!

IMG_1249

Before I left for my 7:30 am class, I had a stabilizing breakfast. I used this container of pomegranate berry yogurt as the base of my meal.

IMG_1243

I combined strawberries, yogurt, and a cup of Kashi Go Lean cereal:

IMG_1244

My sister came along with me to my 7:30 am class since we were heading to the gym on campus for spinning. She found college classes “so boring” and is glad that she is in school to cut hair and not to become an engineer. We are such opposites!!

Brielle and I split a pumpkin pie Kashi bar on our 0.5 mile walk to the gym.

IMG_1247

I haven’t used the on campus gym at UCF in over a year! I always use the one at my apartment, or lift weights at home. It’s quite a nice facility, which I obviously don’t take advantage of.

IMG_1248

We got to the 10:15 am class a bit early to make sure we would get bikes. It was a nice surprise to see Sarah as our teacher!!

IMG_1251

I really enjoyed doing something other than running. It was a nice change, and made me really miss my bicycle!!

Sarah did a great job of teaching the class. I felt like I was working hard, and working up a sweat. My sister also really liked it because her knees bother her when she tries to run.

IMG_1250

As a freshman, I was SO intimidated by spinning classes. The great part about the spin class is you can tailor it to your needs. For example, if you find one of the positions or sprints hard, you can simply sit on the bike, turn it to lower resistance, and recover until you are ready to continue with the class. If it’s too easy, increase your cadence or the resistance on the bike.

I was absolutely STARVING when I got home. I whipped up the first thing that came to mind, a fruit and nut salad:

IMG_1252

I combined:

  • spinach
  • melon
  • grapes
  • strawberries
  • walnuts
  • almonds
  • grilled chicken breast w/ basil and thyme

I topped it all with Trader Joes’ Poppyseed dressing!! I am so thankful that JasoNerd’s brother Zach brought me some more back from Ohio!! 😀

Thanks, Fluffy!

IMG_1254

I might make pumpkin muffins. I have been thinking about them all day!!

Do you ever take group exercise classes? Which are your favorite?

I really love kickboxing! After the marathon, I can’t wait to get back into some fun stuff!

My Longest Run Yet: 15 Miles!

Aaaah! I did it!

IMG_1169

That’s my super excited face.

I ran 15.0 Miles this morning, setting a new PDR (personal distance record). 😀

IMG_1167

HOLLER! (I forgot to stop the watch when I started walking, so the numbers are a bit off.)

Before I left the apartment, I fueled up with a half honey bagel with PB.

IMG_1160

I met Kelly at 5:30 am for our usual Friday run. It was nice to have her with me to keep me occupied for the first 7.0 miles. We walked for a minute or so at the end because I had to go to the bathroom, like REALLY bad. Kelly drove me 1.3 miles to my car, I hoped out, ran to my apartment, went to the bathroom, and ran back out the door. I did all of this is 5 minutes and 36 seconds. Speedy pit stop 😀

I finished the remaining 8.0 miles on my own. I really didn’t know if I could do it! I have never run that far, and never more than 8.0 miles on my own! I actually ran faster by myself, because I was already warmed up, had nobody to talk to, and just wanted to get it over with!

Mentally, I broke the run up into little chunks. First 7.0 miles with Kelly, only 3 more miles to a shot block, only 3 more miles to the next, only 1.5 miles to fill up my water bottle, etc.

Dark cherry Shotbloks: Miles 7,10, and 13.

IMG_1161

Run Stats:

  • Distance: 15.0 miles !!!
  • Time: 2:32
  • Average Pace: 10:10 (a little off because I forgot to stop it, close enough!)
  • Average Heart Rate: 163 bpm

I’m so proud! A few years ago, I couldn’t run 1.0 mile. Hard work pays off, you just have to really want it!

 IMG_1165

When I got home, I wasn’t that hungry but KNEW that I needed to eat something. It didn’t take much effort to decide:

IMG_1185

My yogurt mess contained:

  • 1 container Vanilla Stonyfield yogurt
  • 1/2 cup Kashi go Lean cereal
  • 1/2 cup Bear Naked chocolate granola (yup… 270 calories worth!)
  • banana
  • strawberries… which I got tired of cutting!

IMG_1186

It tastes better once it’s all jumbled up!

IMG_1188

Next item on the list?

ICE BATH!… dun dun dun…

IMG_1173

Trust me, it was cold. Twenty pounds of ice later…

IMG_1175

Haha. Yep. It hurt. I’ve done it a couple of times before, so I was prepped for pain.

I wore a fleece hoodie to stay “warm”.

My legs were sore all over. I figured dunking them in ice was faster than individually icing each area. Once I was all the way in, they went slightly numb feeling and then it wasn’t bad at all.

IMG_1176

I brought along a watch to time myself for 15 minutes…

IMG_1178

…and a cup of hot pear tea!

IMG_1174

…and of course, Runners’ World magazine, and my camera for entertainment.

IMG_1179

Check out those chill bumps…

 IMG_1180

I never thought I would ACTUALLY be training for a marathon. For the past three years, I have been training for 5k-half marathon distances. Not until today have I actually felt like I was MARATHON TRAINING! Now that my long runs are exceeding half marathon distance, it feels for real.

Disney Marathon… here I come!
