I can’t believe that school starts tomorrow morning!
Mondays are going to be the worst. I have to be on campus at 9:30 am, and do not finish until 10:20 pm. Yes… that’s 13 Hours on campus. I live 20 minutes away from campus, but my one hour breaks just don’t leave enough time for commuting back and forth.
Starting tomorrow, I have to pack lunch, snacks, and dinner to take with me to school. It should be interesting to see where this blog goes! I’m really hoping it will keep me motivated not to bring PB+J every single day. 😀
On to today…
After my super filling breakfast, a nice hot shower, and a little cat nap, I hit up Target for some school supplies. BOY was it crowded! I got the basics, pencils, highlighters, notebooks… etc.
By the time I got out of there, it was almost 2 pm. Jason and I headed over to Designer Greens for some lunch.
I was tempted to get the summer salad, as I have done here here and here. Obviously, I get it every time. Today, I went for something new and got the Mexicali.
It included:
- Romaine lettuce
- black beans
- tortilla chips
- green peppers (which I got instead of corn)
- pepperjack cheese
- cheddar cheese (too much cheese!!!)
- little tomatoes
- chipotle-lime dressing on the side
Seriously this thing should serve two. It probably had like 800+ calories! See how little my fork looks?
It was delicious though, and I finished all but a few bites. The ingredients are all healthy and fresh, so I don’t have a problem polishing off that many calories, ESPECIALLY after a 9 mile run!
I have been a serious procrastinator this week, and have been talking about cleaning the office since Tuesday. I definitely saved the worst room for last!

While I worked, I munched on a peach! This baby was the size of a softball and so juicy!
Dinner
Kind of disastrous, but extremely delicious. LOL.
I had these ingredients…
..and planned to make a perfect veggie lasagna.
And it was! Until I realized… I forgot to add the noodles! Jason helped me tuck some noodles in to the mixture, which got kind of messy.
He suggested I sprinkle some more cheese on top when we were done to make it “pretty for the blog.” How thoughtful of him!
Regardless of appearance, it turned out amazing.
Our Veggie Lasagna included:
- 1 zucchini, diced
- 2 yellow squash, diced
- 1 broccoli head
- 1/2 container mushrooms
- 1/4 white onion
- Steamed spinach
- 1 Jar red sauce
- 15 oz ricotta cheese mixed with oregano and basil
I layered it up, and popped in the oven for 45 minutes.

Oozing with veggie-goodness. Too bad Jason thought it didn’t have enough cheese. Typical. 😉
