Meals on the Go

I had to say goodbye to my little sister this afternoon. šŸ˜¦

Before we left for the airport, I made a Mexican themed lunch:

I had a cup of black bean soupā€¦

ā€¦and a salad.

My salad included:

  • romaine lettuce
  • green bell pepper
  • crumbled chips
  • Grilled chicken breast
  • cheese
  • salsa

On the way to test number two of the day, I ate a CLIF bar mini in the car. I almost brought a Pumpkin pie Kashi bar, but I have missed the Brownie! Jason always steals them, but this one was buried in the bar stash! šŸ˜€

I also stopped at D and D for some Latte love! 99 cents, canā€™t beat it!

I packed my dinner in a little Fresh nā€™ Fit container that I have actually had for a while, but never use. It comes with an ice pack, and individual compartments for snacks. In case anyone is wondering, I found it at Target.

In the main compartment I packed a turkey and cheese sandwich. The ice pack fits over the sandwich area, and rests on little ā€œshelvesā€ so it doesnā€™t squish the sandwich.

I filled the top two containers with fruits and veggies: one with carrots and peas, and one with strawberries.

Each of those fits into the groves on the ice packā€¦

ā€¦and closes with the lid!

It kept my food cold (for 6 hours) without having to pack the whole bulky lunch cooler! I really liked using it!

What do you use to carry around your meals or snacks when youā€™re on the go?

Edited to add: Iā€™m currently nibbling on Mickeyā€™s Earā€¦ okā€¦ putting down the rice krispie treatā€¦

Two-A-Day

Iā€™m getting excited! Iā€™m racing again this weekend!!

Miracle Miles 15k and 5k are this Saturday, and I know itā€™s going to be a blast!

I have never run a 15k race before, but I think itā€™s going to be really fun. I will PR no matter what my time! šŸ˜‰

Jason called me around lunch time today to ask me if I would run 3.0 miles with him tonight to practice for this Saturday! (heā€™s running the 5k!) Of course I said yes, even though I already ran 2.0 miles this morning.

Before our run, I had a Kashi Pumpkin Pie bar:

Didnā€™t hurt my tummy! Yay!

I tried to cram a whole bunch of veggies into dinner, so I made black bean veggie burgers.. (I ate 1.5- so good!)

Ingredients:

  • 1 cup black beans
  • 1 egg
  • bread crumbs
  • onion
  • broccoli
  • scoop of brown rice
  • paprika
  • garlic salt

I blended them together in the blender and hit ā€œpulseā€ a few times to break everything up. Then, I separated them into four patties and heated them in a pan! They were quick and easy!

On the sideā€¦homemade sweet potato friesā€¦
