Pumpkin Penne

I don’t think pumpkin gets much better than this.

I have been craving all things pumpkin lately. Pumpkin spice lattes. Pumpkin muffins. Pumpkin ice cream. Pumpkin seeds. Pumpkin oatmeal. Pumpkin Swirl Bread. Pumpkin gelato.

 

When Heather made Baked Pumpkin Penne, I was intrigued. It wasn’t a recipe that immediately sounded A-maaaaa-zing to me. After BFF Debbie made it, and told me that it tasted similar to my beloved Pumpkin Ravioli I tried while visiting her in Princeton, NJ last year, I knew that I must give it a try.

 

From November 20, 2009, and I quote: “That was the best food decision of my life.” And it was.

 

 

I won’t lie, combining pumpkin and cheese in a bowl sounded a wee bit odd to me.

I was so happy with the results!

 

It made a TON! I literally was eating pumpkin penne leftovers every day until they went bad. I can’t imagine what the entire recipe would have produced; I only made one-third of her original recipe!

On the side, I made a spring mix salad with sliced apples, dried cranberries, and pomegranate raspberry dressing. It was the perfect sweet complement.

This recipe is definitely a keeper. 🙂

  1. Mmm, that sounds amazing! Definitely going to try it. My favorite pumpkin recipe to date is pumpkin bisque OR pumpkin chocolate chip cookies. YUMMY!

  3. I haven’t gotten super creative, but I LOVE pumpkin pie smoothies! And I added pumpkin to Anne. P’s banana muffin recipe and it was great!!

  4. Pasta Cheese Pumpkin = sounds awesome. Will have to taste test it for myself. Recently tried a pumpkin Parmesan sauce that was fabulous.

  5. Pumpkin risotto. DELICIOUS. I think that should be the next venture in your kitchen.

  9. that looks incredible! Not a combo I would think of myself but once I see it it makes perfect sense! I love putting pumpkin in everything this time of year.

  10. That actually sounds REALLY good to me. A few years ago when I was an event planner the bride wanted pumpkin ravioli with cream sauce, and it actually worked really well. Pumpkin/cheese/cream actually make sense together.

  14. That. looks. amazing. I have seen quite a few pumpkin recipes but nothing like this, you are on to something there!!

  15. I tried pumpkin pasta bake from Heather at Wheres the Beach- silken tofu, pumpkin puree, sundried tomatoes and spinach all blended, then baked with pasta (pre cook the pasta)- it is amazing!
    I also love the pumpkin gingerbread from Angela at Oh She Glows- (I made it with egg coz I am not vegan)- it is amazing!

  16. I am super jealous of your access to canned pumpkin, lol. And I had to share that I used to always mix it with cheese (something else I miss…). Savory pumpkin oats with mozarella is amazing, though that pasta REALLY looks incredible.

  17. Megan, what recipe proportions did you use for 1/3 the original recipe? Did you just cut everything in thirds? It looks delicious and I want to try it, but I have had bad luck in the past when I have tried to reduce servings on a recipe. Thanks!
